Papa Rellena

Serves 4 to 6 meat

Papa Rellena

Papa Rellena finds its roots in the Peruvian home kitchen, where tradition meets the practical act of feeding a family. This comforting dish is often prepared as a hearty meal, bringing together the simplicity of potatoes and the robust flavors of a well-seasoned beef filling. Street vendors might serve it to passersby, but the home version is crafted with a familiar touch, each step guided by instinct rather than strict measurement.

When done right, Papa Rellena offers a crispy, golden exterior that gives way to a soft, pillowy interior filled with savory minced beef. The dish is seasoned with a discerning hand, each bite balanced and satisfying. Enjoy it with a side of salsa criolla, its tangy freshness perfectly complementing the rich, warm flavors. This is a dish meant to be shared, a reminder of the simple pleasures found in everyday meals.

Ingredients

  • 4potatoes
  • 250 gminced beef filling
  • for fryingoil
  • salsa criolla — to serve
  • to tastefine sea salt

Method

  1. Start by peeling the 4 potatoes and cutting them into large chunks. Place them in a pot and cover with cold water, adding a pinch of fine sea salt to the water. Bring the pot to a boil over high heat, then reduce to a simmer. Cook until the potatoes are tender and easily pierced with a fork, indicating they are ready to be mashed.
  2. Drain the potatoes thoroughly and return them to the pot. Mash the potatoes until smooth and free of lumps, ensuring a creamy texture. Allow the mashed potatoes to cool slightly, which will make them easier to handle later.
  3. While the potatoes cool, prepare the minced beef filling. In a skillet over medium heat, add a small amount of oil. Once the oil is shimmering, add the 250 g of minced beef and cook, stirring occasionally, until the beef is browned and cooked through. Season with fine sea salt to taste, ensuring the flavors are well-balanced.
  4. Once the potatoes are cool enough to handle, take a portion of the mashed potatoes and flatten it in your palm to form a small patty. Place a spoonful of the cooked beef filling in the center of the patty. Carefully fold the edges of the potato around the filling, sealing it completely to form an oval shape. Repeat this process with the remaining potatoes and filling.
  5. In a deep frying pan or pot, heat enough oil for frying over medium-high heat. Test the oil by dropping a small piece of potato into it; if it sizzles and rises to the surface, the oil is ready. Gently lower the stuffed potato ovals into the hot oil, frying them in batches if necessary to avoid overcrowding.
  6. Fry the Papa Rellena until they are golden brown and crispy on all sides. Use a slotted spoon to carefully remove them from the oil, allowing excess oil to drain off. Place them on a plate lined with paper towels to absorb any remaining oil.
  7. Finish the Papa Rellena with a light sprinkle of fine sea salt while they are still hot, enhancing their flavor. Serve immediately with salsa criolla on the side, inviting everyone to share and enjoy this traditional Peruvian dish.
