It's a staple in Turkish homes, where artichokes are transformed into a delicate dish with the addition of vibrant carrots and hearty potatoes. Ingredients

Method

  1. Begin by preparing the vegetables. Peel and dice the 2 carrots and 1 potato into small, even cubes. This ensures they cook evenly. Squeeze the juice of 1 lemon into a bowl, and set aside. This will be used to prevent the artichokes from browning and to add a touch of acidity to the dish.
  2. Prepare the artichoke bottoms by rubbing them with the lemon juice to prevent oxidation. This will keep them from turning brown and maintain their fresh appearance. Set them aside on a plate.
  3. In a large, deep skillet or pot, pour in 100 ml of olive oil and heat over medium. Once the oil is shimmering, add the diced carrots and potatoes. Stir them occasionally to coat with oil and allow them to soften slightly, which should take about 5 minutes. You want them to start getting tender but not fully cooked.
  4. Add the artichoke bottoms to the skillet, placing them flat side up. Pour any remaining lemon juice over the artichokes. This not only enhances the flavor but also helps in cooking them evenly. Cover the skillet with a lid to trap the steam, which will aid in cooking the vegetables thoroughly.
  5. After about 10 minutes, check the artichokes and vegetables. The artichokes should be tender when pierced with a fork, and the potatoes and carrots should be soft but still hold their shape. If needed, add a splash of water to prevent sticking and ensure even cooking.
  6. Once the vegetables are cooked to the desired tenderness, season the dish with fine sea salt and black pepper to taste. Stir gently to combine the flavors without breaking the vegetables.
  7. Remove the skillet from the heat and let it cool slightly. Chop a handful of fresh dill and sprinkle it generously over the dish. The dill adds a fresh, aromatic finish that complements the olive oil and lemon.
  8. Serve the Zeytinyağlı Enginar warm or at room temperature. This dish is traditionally enjoyed with crusty bread and shared among family and friends.
