Ingredients

  • 750 ml (3 cups)milk
  • 150 g (5 oz)dark chocolate, chopped
  • 1 tbspsugar — optional

Method

  1. Pour 750 ml (3 cups) of milk into a medium-sized saucepan. Place the saucepan over medium heat and warm the milk until it begins to steam, stirring occasionally to prevent a skin from forming on the surface. You should see gentle wisps of steam rising, but avoid letting it reach a full boil.
  2. Once the milk is steaming, add 150 g (5 oz) of chopped dark chocolate to the saucepan. Use a whisk to stir continuously until the chocolate is completely melted and the mixture becomes smooth and slightly thickened. This should result in a glossy, velvety texture that coats the back of a spoon.
