Indian Yogurt Drink

Indian Yogurt Drink, often known as 'chaas' or 'buttermilk', finds its place in many Indian homes, particularly during the sweltering summer months when its cooling properties are most appreciated. Traditionally, it is prepared with a practiced hand, with each household adjusting the salt and fat content to taste. This drink is a staple on the family table, ready to refresh and soothe on a hot afternoon.

The drink should feel light and refreshing, with the tangy creaminess of the yogurt balanced by a subtle whisper of salt. When served ice-cold, it's a simple pleasure that cuts through the heat, offering a gentle, satisfying chill. The home-style version captures the essence of everyday Indian cooking, where flavor is crafted by intuition and tradition.

Ingredients

  • 400 gyogurt
  • 300 mlcold water
  • 1/2 tspfine sea salt
  • as neededice

Method

  1. Start by ensuring your yogurt is fresh and at room temperature. This will help it blend smoothly without any lumps. Use a medium-sized mixing bowl for easy handling.
  2. Measure 400 g of yogurt into the bowl. Use a whisk to gently stir the yogurt until it becomes smooth and creamy, ensuring there are no lumps. This step is crucial for achieving the right texture in your drink.
  3. Add 300 ml of cold water to the yogurt. Pour it slowly while whisking continuously to incorporate the water evenly. The mixture should become slightly frothy and have a uniform consistency.
  4. Sprinkle 1/2 teaspoon of fine sea salt into the mixture. Stir gently to dissolve the salt completely. Taste the mixture to ensure the salt is balanced, adjusting slightly if needed to suit your preference.
  5. Prepare a serving jug by placing a few ice cubes inside. This will chill the drink further and keep it cold when served.
  6. Pour the yogurt mixture into the jug over the ice cubes. The ice will help maintain the drink's refreshing quality.
  7. Serve the Indian Yogurt Drink immediately in traditional glassware, such as steel tumblers or small glasses. The drink should be cool and refreshing, with a slight tang from the yogurt and a hint of saltiness.
