Mango Juice

Mango Juice is a staple in Ethiopian households, particularly cherished in the sweltering heat. Its presence is a signal that the sun is high and the day demands something refreshing. This simple concoction draws from the mango's natural sweetness and fragrance, inviting anyone within reach to pause and cool down.

When prepared with ripe mangoes, this juice is luxuriously thick yet refreshingly light, a balance that dances between smooth and invigorating. The sugar heightens the mango's innate tropical notes, while cold water and ice ensure it quenches thoroughly. It's a home comfort, served with the warmth of familiarity, perfect for any sun-drenched afternoon.

Ingredients

  • 3ripe mangoes — peeled and chopped
  • 2 cupscold water
  • 2 tbspsugar — optional
  • as neededice

Method

  1. Begin by peeling the 3 ripe mangoes. Use a sharp knife to carefully slice the skin away, starting from the top and moving downwards. Once peeled, cut the mango flesh away from the pit, trying to keep the pieces as large as possible for easier blending.
  2. Place the mango pieces into a blender. Add 2 cups of cold water to the blender to help the mango blend smoothly. Blend on high speed until the mixture is completely smooth and no chunks remain. The puree should have a thick, velvety texture.
  3. Taste the mango puree. If you find it needs a bit more sweetness, add 2 tablespoons of sugar. Blend again briefly to ensure the sugar is fully dissolved into the puree.
  4. Prepare a tall glass by adding ice as needed to chill the drink. This will ensure the mango juice is refreshing and cool, perfect for a hot day.
  5. Carefully pour the mango puree over the ice in the glass. Pour slowly to prevent the ice from shifting too much and to maintain a smooth surface on the juice.
  6. Serve the mango juice immediately while it is cold. The vibrant color and fragrant aroma should be inviting, signaling that the juice is ready to be enjoyed.
