Maracuya Sour

Serves 4 to 6 vegan

Maracuya Sour

Emerging from the vibrant bars of Lima, the Maracuya Sour is a spirited twist on the classic Pisco Sour, infusing the tropical essence of passion fruit. Traditionally crafted with a generous hand of salt and an indulgent touch of fat, this cocktail finds its way to family tables, echoing the warmth of home gatherings. It's a drink that bridges the bustling nightlife with the cozy familiarity of family kitchens.

The Maracuya Sour greets your palate with a bright, tangy burst of passion fruit, mellowed by the smooth, rich pisco. The egg white creates a frothy top, adding a creamy texture to each sip, while the syrup brings a subtle sweetness that balances the tartness perfectly. It’s a refreshing delight, perfect for sharing and savoring in the comfort of home.

Ingredients

  • 60 mlpisco
  • 40 mlpassion fruit
  • 20 mlsyrup
  • as neededice
  • egg white — optional

Method

  1. Begin by chilling your serving glass. Place it in the freezer or fill it with ice water to ensure it is well-chilled before serving. This step is crucial as it keeps the Maracuya Sour refreshing and enhances the overall experience.
  2. Measure 60 ml of pisco and pour it into a cocktail shaker. The pisco is the heart of the Maracuya Sour, so precise measurement is key to maintaining the traditional balance of flavors.
  3. Add 40 ml of passion fruit juice to the shaker. The passion fruit provides the signature tangy and tropical flavor, so ensure it's fresh and vibrant in color, which indicates ripeness.
  4. Pour in 20 ml of simple syrup to the shaker. The syrup sweetens the drink and balances the tartness of the passion fruit. Taste the syrup beforehand to ensure it is not overly sweet, which could overpower the other ingredients.
  5. Add an egg white to the shaker. This ingredient is essential for creating the creamy texture and frothy top that characterizes a Maracuya Sour. Ensure the egg white is fresh and free from any yolk.
  6. Fill the shaker with ice, enough to cover the liquid. This chills the mixture and helps to aerate the egg white, creating the desired frothy texture. Shake vigorously for about 15 seconds until the outside of the shaker feels cold and frosty.
  7. Discard the ice or water from the chilled glass. Strain the cocktail mixture into the glass, using a fine mesh strainer to remove any ice shards and ensure a smooth, silky finish.
  8. Serve the Maracuya Sour immediately in the chilled glass. The frothy top should be visible, with a light, airy texture. Enjoy this traditional Peruvian cocktail with friends or family, savoring its balance of sweet, sour, and creamy notes.
