Nuoc Mia

Serves 4 to 6 vegan

Nuoc Mia

Nuoc Mia, a beloved Vietnamese refreshment, captures the essence of tropical indulgence with its roots firmly planted in the bustling streets where street vendors expertly mill sugarcane into a sweet, energizing drink. At home, families replicate this experience by carefully balancing salt and lime, creating a drink that's as much about the process as it is about the enjoyment. This version brings the vibrant spirit of those street-side moments to the comfort of your own kitchen.

The taste of Nuoc Mia is a delightful dance between the robust sweetness of fresh sugarcane and the zesty tang of lime, with a subtle warmth from a pinch of ginger. Generously salted to enhance the natural flavors, it's poured over ice for a refreshing chill, offering a perfect contrast to hot, humid days. This cooling drink, with its layers of flavor, is meant to be savored slowly, sip by sip.

Ingredients

  • 4sugarcane stalks — juiced
  • 1lime
  • as neededice
  • 1 pinchginger
  • 1 pinchsalt

Method

  1. Begin by preparing the sugarcane stalks. Use a sharp knife to peel the outer layer of the sugarcane, revealing the juicy interior. Cut the peeled sugarcane into smaller pieces, about 4 to 6 inches long, which will be easier to handle and juice.
  2. Juice the sugarcane pieces using a sugarcane juicer or a strong blender. If using a blender, add a small amount of water to help break down the fibers, then strain the juice through a fine mesh sieve or cheesecloth to remove any pulp. You should have a clear, sweet juice as the base for your Nuoc Mia.
  3. Chill the sugarcane juice by placing it in the refrigerator for at least 30 minutes. This step is crucial as it enhances the refreshing quality of the drink, making it more enjoyable, especially on a hot day.
  4. While the juice is chilling, prepare the lime. Roll the lime on the countertop with your palm to release its juices, then cut it in half and squeeze the juice into a small bowl. Measure out about 1 tablespoon of lime juice to ensure the balance of flavors is maintained.
  5. Once the sugarcane juice is chilled, gently stir in the lime juice, a pinch of ginger, and a pinch of salt. Be careful not to overmix, as vigorous stirring can cause the aromas to dissipate. The ginger and salt should enhance the sweetness of the sugarcane juice without overpowering it.
  6. Prepare glasses by filling them with ice. Pour the Nuoc Mia over the ice, allowing the cold to accentuate the freshness of the drink. The ice will also slightly dilute the juice, balancing the sweetness further.
  7. Serve the Nuoc Mia immediately in traditional glassware, if available, to honor the Vietnamese tradition. The drink should be enjoyed fresh, with the natural sweetness of the sugarcane and the subtle tang of lime creating a perfect harmony.
