The taste of Poncha da Madeira is a spirited interplay of sweet and sour, with the bold kick of aguardente de cana balanced by the rich, earthy notes of sugarcane honey. Fresh lemon juice and a hint of orange provide a bright, citrusy backdrop, making each sip a vibrant experience. Ingredients

  • 150 mlaguardente de cana
  • 4 tbspsugarcane honey
  • 200 mllemon juice — freshly squeezed
  • 1orange — juiced
  • ice cubes — to serve

Method

  1. Begin by ensuring your aguardente de cana is at room temperature. This will allow the flavors to meld more effectively with the other ingredients. If the aguardente is too cold, it can dull the citrus flavors and hinder the blending process.
  2. In a medium-sized mixing bowl, combine 4 tablespoons of sugarcane honey with 200 ml of freshly squeezed lemon juice. Stir the mixture vigorously with a whisk or a wooden spoon until the honey is completely dissolved. This ensures that the sweetness is evenly distributed throughout the drink, preventing it from settling at the bottom.
  3. Once the honey is fully dissolved, add the 150 ml of room temperature aguardente de cana to the bowl. Stir gently to combine, allowing the alcohol to integrate smoothly with the sweetened lemon juice.
  4. Slice the orange in half and squeeze the juice from both halves into the mixture. You can use a citrus juicer or simply squeeze by hand, ensuring that you catch any seeds. Stir the mixture again to incorporate the orange juice, which adds a layer of sweetness and complexity to the drink.
  5. Allow the mixture to rest for about 5 minutes. This resting period lets the citrus flavors infuse fully with the aguardente, creating a balanced and harmonious flavor profile. Taste the mixture and adjust the sweetness if necessary by adding more sugarcane honey, stirring until dissolved.
  6. Fill serving glasses with ice cubes to chill the drink as you serve it. Pour the Poncha da Madeira over the ice, ensuring each glass receives an even distribution of the mixture. The ice will cool the drink rapidly, making it refreshing and crisp.
