Spris Layered Juice Cup

Spris Layered Juice Cup is a beloved staple of Addis Ababa's bustling juice bars, where its vibrant layers draw people in for a refreshing pause. This colorful beverage mirrors the lively spirit of the city, inviting both locals and visitors to savor a moment of simple pleasure. At home, crafting spris becomes a joyful ritual, maintaining the same direct and generous flavors reminiscent of its street-side origins.

The experience of spris is as much about its texture as its taste. Each layer offers a distinct sensation: the creamy smoothness of avocado, the sunny brightness of mango, and the sweet, mellow tones of papaya or strawberry. As you dip your spoon or straw through the layers, the flavors meld yet remain distinct, offering a delightful play of taste and texture in every sip.

Ingredients

  • 1 cupavocado puree
  • 1 cupmango puree
  • 1 cuppapaya or strawberry puree
  • as neededice

Method

  1. Start by preparing the avocado puree. Halve and pit ripe avocados, then scoop the flesh into a blender. Blend until completely smooth, ensuring there are no lumps. If the puree is too thick, add a small amount of water to achieve a smooth consistency.
  2. Next, prepare the mango puree. Peel and dice ripe mangoes, removing the pit. Place the mango pieces in the blender and blend until smooth. Taste the puree; if it's too tart, add a small amount of sugar and blend again until fully incorporated.
  3. For the final puree, choose either papaya or strawberries based on your preference. If using papaya, peel, deseed, and dice it before blending until smooth. If using strawberries, hull them first, then blend until smooth. Adjust sweetness if necessary by adding a small amount of sugar and blending again.
  4. Chill each puree separately by placing them in the refrigerator for at least 30 minutes. If you prefer a colder drink, you can blend each puree with a few ice cubes until the desired chill is achieved.
  5. To assemble the Spris Layered Juice Cup, take a tall glass and carefully pour the avocado puree into the bottom, filling about one-third of the glass. Use a spoon to smooth the top and create an even layer.
  6. Gently pour the mango puree over the back of a spoon onto the avocado layer. This technique helps to keep the layers distinct. Fill the glass another third of the way, smoothing the top again.
  7. Finally, add the papaya or strawberry puree as the top layer, using the same spoon technique to maintain separation. Fill the glass to the top, ensuring the layers remain visible and distinct.
  8. Serve the Spris Layered Juice Cup immediately while cold, enjoying the vibrant colors and refreshing flavors of this traditional Ethiopian beverage.
