Sugarcane Juice

Sugarcane Juice

Sugarcane juice, or 'ganne ka ras' as it's fondly known, is a cherished refreshment across Pakistan, especially during the sweltering summer months. While street vendors crush the sturdy stalks with mechanical mills, the home version captures the same essence with a more personal touch. This recipe brings the bustling energy of the streets into the calm of your kitchen, where the salt is measured with instinct and the fat is added with a generous hand.

The juice is a sweet, invigorating nectar, balanced by a squeeze of lemon and a hint of ginger. The black salt adds an unexpected depth, transforming a simple drink into something memorable. Serve it chilled over ice, and let each sip be a respite from the heat, refreshing and full of life.

Ingredients

  • 4sugarcane stalks — juiced
  • 1lemon
  • as neededice
  • 1 pinchginger
  • 1 pinchblack salt

Method

  1. Begin by thoroughly washing the 4 sugarcane stalks under running water to remove any dirt or debris. Use a sharp knife to peel the outer layer of the sugarcane, revealing the juicy inner core. Cut the peeled sugarcane into smaller pieces, about 4-5 inches in length, to make them easier to handle.
  2. Using a sugarcane juicer or a heavy-duty blender, extract the juice from the sugarcane pieces. If using a blender, add a small amount of water to help the blending process, then strain the mixture through a fine mesh sieve or cheesecloth to remove any fibrous pulp, ensuring a smooth juice.
  3. Squeeze the juice of 1 lemon into the sugarcane juice. This adds a refreshing tanginess that balances the natural sweetness of the sugarcane. Stir gently to combine, being careful not to lose the aromatic essence of the lemon.
  4. Add a pinch of ginger to the juice. This subtle addition enhances the flavor profile with a hint of warmth and spice. Stir gently to incorporate the ginger evenly throughout the juice.
  5. Sprinkle a pinch of black salt into the juice. The black salt adds a unique savory depth and enhances the overall flavor. Stir gently to ensure the salt is evenly distributed.
  6. Prepare a serving jug by filling it with as needed ice to chill the juice quickly, preserving its freshness. Pour the sugarcane juice over the ice, allowing it to cool and slightly dilute to the perfect refreshing consistency.
  7. Serve the sugarcane juice immediately in traditional glassware. The juice should have a light golden color and a refreshing aroma, ready to be enjoyed as a cooling treat on a warm day.
