Sweet Lassi

Serves 4 to 6 vegetarian

Sweet Lassi

Sweet Lassi hails from the bustling dhabas of Punjab, where it's a staple refreshment for weary travelers and locals alike. These roadside eateries are known for serving hearty meals, and the lassi provides a cooling counterpoint to the spiced dishes that dominate the menu. In home kitchens, the lassi is a cherished companion to leisurely lunches or a sweet finish to a vibrant meal.

Expect a creamy, velvety drink with a gentle sweetness, where the tang of yogurt marries the floral notes of cardamom and rose water. Ice chills this concoction to perfection, offering a refreshing break from the heat. It's a drink to be savored, sip by sip, amidst the laughter and stories shared at the table.

Ingredients

  • 400 gyogurt
  • 2 tbspsugar
  • 100 mlwater
  • 1 pinchcardamom
  • 1 tsprose water
  • as neededice

Method

  1. Begin by chilling a large mixing bowl in the refrigerator for about 15 minutes. This will help maintain the cool temperature of the lassi, which is essential for a refreshing drink. While the bowl chills, ensure all your ingredients are ready at hand.
  2. Once the bowl is chilled, measure 400 g of yogurt and transfer it into the bowl. Use a whisk to gently stir the yogurt until it is smooth and creamy, ensuring there are no lumps. This will create a silky base for your lassi.
  3. Add 2 tablespoons of sugar to the yogurt. Stir gently until the sugar is fully dissolved. The sugar should blend seamlessly into the yogurt, lending a subtle sweetness without any grainy texture.
  4. Pour in 100 ml of water gradually, whisking continuously. This will thin the yogurt to the desired consistency, making it light and drinkable. The mixture should be smooth and slightly frothy.
  5. Sprinkle a pinch of cardamom into the mixture. Stir gently to incorporate the spice, which will add a warm, aromatic note to the lassi. Be careful not to overmix, as vigorous stirring can cause the aromas to dissipate.
  6. Add 1 teaspoon of rose water to the lassi. Stir briefly to combine, allowing the floral fragrance to infuse the drink. The rose water should be subtle, enhancing the overall aroma without overpowering it.
  7. Prepare your serving glasses by placing a few ice cubes in each. Pour the lassi over the ice, filling the glasses nearly to the brim. The ice will keep the lassi chilled and refreshing as you serve it.
  8. Serve the sweet lassi immediately in traditional glassware, if available, to enhance the authentic experience. The lassi should be creamy, aromatic, and perfectly chilled, ready to be enjoyed as a refreshing treat.
