Vissinada

Vissinada is a beloved home refreshment across Greece, where it graces tables during the warm summer months. This simple, yet delightful drink is traditionally prepared in family kitchens, where recipes are passed down through generations without the need for precise measurements. Olive oil, salt, and lemon are staples in these kitchens, but Vissinada draws its unique character from the rich, tangy sweetness of sour cherry syrup.

Each sip of Vissinada is a burst of refreshing tartness, balanced perfectly by the sweetness of the cherries. Served chilled over ice cubes, it offers a cooling respite from the heat. The vibrant red hue and the occasional fresh cherry garnish make it as pleasing to the eye as it is to the palate.

Ingredients

  • 80 mlsour cherry syrup
  • 300 mlcold water or soda
  • ice cubes — to serve
  • fresh cherries — optional

Method

  1. Begin by chilling the base for your Vissinada. Place 80 ml of sour cherry syrup in the refrigerator until it reaches a cool, wine-like temperature. This ensures the syrup is refreshing and not overly sweet when combined with other ingredients.
  2. Once the syrup is chilled, measure 300 ml of cold water or soda. If you prefer a fizzy drink, soda is the traditional choice, reminiscent of Greek tavernas. Ensure the water or soda is as cold as possible to maintain the drink's refreshing quality.
  3. In a tall glass, gently combine the chilled sour cherry syrup with the cold water or soda. Pour the liquid slowly to preserve the carbonation if using soda, which will keep the drink lively and effervescent.
  4. Add a handful of ice cubes to the glass. This not only keeps the drink cold but also slightly dilutes the syrup, balancing the sweetness and enhancing the cherry flavor.
  5. Garnish the drink with a few fresh cherries. This adds a touch of authenticity and a burst of color, making the Vissinada visually appealing and inviting.
  6. Serve the Vissinada immediately in a traditional glass, preferably with a small plate of meze on the side if desired. The drink should be enjoyed fresh, capturing the essence of a Greek café experience.
