Korean Flatbread

Korean Flatbread, a staple of the home table, is a dish where intuition guides the cook more than any written recipe. This flatbread is a beloved presence at Korean meals, where its preparation is a blend of tradition and personal touch. Salt is measured by feel, and a generous hand with oil ensures its signature richness. It's the kind of dish that brings comfort and familiarity, a silent participant in the joy of sharing a meal.

The flatbread itself is tender yet hearty, with a subtle chewiness that makes each bite satisfying. It carries a hint of olive oil, lending a gentle richness that complements the bread's natural flavors. Ingredients

  • 500 gbread flour
  • 7 gdry yeast
  • 300 mlwarm water
  • 1 tspfine sea salt
  • 1 tbspolive oil

Method

  1. In a large mixing bowl, combine 500 g bread flour and 1 tsp fine sea salt. Create a well in the center and add 7 g dry yeast. Pour 300 ml warm water into the well, ensuring the water is around body temperature to activate the yeast effectively. Gradually mix the flour into the water and yeast using your hands or a wooden spoon until a shaggy dough forms.
  2. Transfer the dough onto a lightly floured surface. Knead the dough by pushing it away with the heel of your hand, folding it back over itself, and turning it slightly. Continue kneading for about 10 minutes, or until the dough becomes smooth and elastic. The dough should spring back when you press it lightly with a finger.
  3. Place the kneaded dough in a clean bowl and coat it lightly with 1 tbsp olive oil to prevent sticking. Cover the bowl with a damp cloth or plastic wrap and let it rise in a warm, draft-free area until it doubles in size. This should take about 1 to 2 hours, depending on the room temperature.
  4. Once the dough has risen, gently punch it down to release excess air. Transfer it back to the floured surface and divide it into equal portions, shaping each into a ball. Flatten each ball slightly with your hands to form a disk, ensuring the thickness is even throughout.
  5. Preheat your oven to 220°C (428°F) and place a baking sheet inside to heat up. Carefully transfer the shaped dough disks onto the hot baking sheet, leaving space between each piece to allow for expansion. Bake in the oven for about 15 minutes, or until the flatbreads are golden brown on the surface and sound hollow when tapped on the bottom.
  6. Remove the flatbreads from the oven and immediately transfer them to a wire rack. Allow them to cool slightly, which will help set the crumb and maintain a soft interior. The flatbreads should feel firm on the outside but remain tender inside.
  7. Serve the Korean Flatbread warm, alongside your meal. The bread's slightly chewy texture and subtle flavor make it a perfect accompaniment for sharing at the table, embodying the communal spirit of Korean dining.
