Paratha

Serves 4 to 6 vegetarian

Paratha

Paratha is the quintessential breakfast flatbread that graces Pakistani tables with its golden, flaky layers. It represents the morning's first act of comfort, crafted with precision on a hot tawa. The salt is never measured mechanically but judged by hand, capturing the essence of a family cook's intuition. This recipe is a written testament to the way parathas are lovingly prepared in many homes across Pakistan, where the generous use of ghee and the warmth of the kitchen intertwine.

Biting into a paratha reveals its secrets: the crisp, yet tender layers that give way to a rich, buttery finish. The ajwain seeds scattered within offer a subtle hint of spice, complementing the dough's earthy whole wheat flavor. This paratha doesn't just sit on a plate; it invites communal sharing, as family and friends dive into its inviting warmth, often accompanied by spicy pickles, eggs, or a simple cup of chai.

Ingredients

  • 400 gwhole wheat flour
  • 80 gghee
  • as neededwater
  • 1/2 tspfine sea salt
  • 1 tspajwain — optional

Method

  1. In a large mixing bowl, combine 400 g whole wheat flour, 1/2 tsp fine sea salt, and 1 tsp ajwain. Gradually add water, a little at a time, while mixing with your hand until the dough begins to come together. The dough should be soft but not sticky. Knead the dough for about 10 minutes until it becomes smooth and elastic. Cover the bowl with a damp cloth and let the dough rest for at least 30 minutes to allow the gluten to develop.
  2. After the dough has rested, divide it into equal portions, roughly the size of a golf ball. Roll each portion into a smooth ball using your palms. Flatten each ball slightly and dust with a little flour to prevent sticking. Using a rolling pin, roll out each ball into a circle about 6 inches in diameter, ensuring even thickness throughout.
  3. Preheat a tawa or a heavy-bottomed frying pan over medium-high heat. Once hot, place a rolled-out paratha onto the tawa. Cook for about 30 seconds until you see bubbles forming on the surface. Flip the paratha using a spatula.
  4. Spread about 1 tsp of ghee on the surface of the paratha and flip again. Press gently with the spatula, moving the paratha in a circular motion to ensure even cooking. Spread another 1 tsp of ghee on the other side and flip once more.
  5. Continue cooking, pressing and flipping, until both sides are golden brown with darker spots and the paratha is cooked through. The paratha should be crisp on the outside and soft on the inside. Remove from the pan and place on a wire rack to cool slightly, which helps set the texture.
  6. Repeat the process with the remaining dough balls, ensuring the tawa remains hot for each paratha. Adjust the heat as needed to prevent burning. Once all parathas are cooked, serve them warm with your meal, allowing everyone to enjoy the fresh, flaky layers.
