Warm Pita for the Table

Warm Pita for the Table is a staple of Mediterranean meals, where simplicity meets flavor in every bite. The pita should be soft and slightly chewy, with the gentle tang of yeast balanced by the richness of extra virgin olive oil. Ingredients

  • 450 gflour
  • 7 gdry yeast
  • 280 mlwarm water
  • 2 tbspextra virgin olive oil
  • 1 tspfine sea salt

Method

  1. In a large mixing bowl, combine 450 g of flour and 7 g of dry yeast. Gradually add 280 ml of warm water, ensuring the water is not too hot to avoid killing the yeast. Mix with a wooden spoon until a shaggy dough forms. Add 2 tbsp of extra virgin olive oil and 1 tsp of fine sea salt, then mix until the ingredients are well incorporated.
  2. Transfer the dough onto a lightly floured surface. Knead the dough for about 8 to 10 minutes until it becomes smooth and elastic. The dough should spring back when lightly pressed with a finger. Form the dough into a ball.
  3. Place the dough ball into a clean, lightly oiled bowl. Cover it with a damp cloth or plastic wrap to prevent drying out. Allow it to rise in a warm, draft-free area until it doubles in size. This should take about 1 to 1.5 hours, depending on the room temperature.
  4. Once risen, gently punch down the dough to release any air bubbles. Divide the dough into 8 equal pieces. Shape each piece into a ball by tucking the edges underneath, then flatten each ball gently with your palm to form a disc about 1 cm thick.
  5. Preheat your oven to 230°C (450°F) and place a baking stone or an inverted baking sheet inside to heat. Once the oven is hot, place the dough discs on the preheated surface. Bake for 5 to 7 minutes, or until the pitas puff up and develop a light golden color on the surface.
  6. Remove the pitas from the oven and transfer them to a wire rack. Allow them to cool for a few minutes so the crumb can set, but not so long that they lose their warmth.
  7. Serve the warm pita with extra virgin olive oil, your choice of dips, or alongside your meal. The pita should be soft and slightly chewy, perfect for tearing and sharing at the table.
