Serves 4 to 6 Dessert vegetarian, Desserts

Brasileiro Milk Pudding

Rooted in the comforting routines of Brazilian home kitchens, Brasileiro Milk Pudding is a cherished dessert that graces tables with its simple yet indulgent charm. It's a staple for family gatherings and Sunday lunches, where the art of cooking is passed from one generation to the next. The pudding's humble origins are reflected in its straightforward preparation, echoing the warmth of a Brazilian home.

Expect a velvety texture that lingers on the palate, with the subtle sweetness of sugar and the fragrant whisper of vanilla. The pudding is rich and creamy, thanks to a generous use of milk and a touch of starch for body. It's a dessert meant to be savored slowly, spoonful by spoonful, as you share stories and laughter around the table.

Ingredients

  • 1 Lmilk
  • 100 gsugar
  • 40 gstarch
  • 1 tspvanilla

Method

  1. Start by preparing your ingredients. Measure 1 liter of milk, 100 grams of sugar, and 40 grams of starch. Place these ingredients in a medium-sized saucepan. Allow them to come to room temperature, which helps them blend smoothly and prevents lumps when cooking.
  2. Place the saucepan over medium heat and begin to stir the mixture gently with a wooden spoon. As the milk heats, the sugar will dissolve, and the starch will begin to thicken the mixture. Continue stirring to ensure even cooking and to prevent the starch from settling at the bottom.
  3. Once the mixture begins to thicken, add 1 teaspoon of vanilla extract. The vanilla will infuse the pudding with a rich aroma and enhance its flavor. Keep stirring continuously to incorporate the vanilla evenly throughout the mixture.
  4. Continue cooking the mixture until it reaches a thick, custard-like consistency. You will know it is ready when it coats the back of the spoon and leaves a clear line when you run your finger through it. This indicates that the starch has fully activated, and the pudding is thickened properly.
  5. Remove the saucepan from the heat and allow the pudding to cool slightly. This cooling period helps the pudding set further and makes it easier to handle. Stir occasionally to prevent a skin from forming on the surface.
  6. Pour the pudding into individual serving dishes or a large serving bowl. Smooth the top with a spatula for an even finish. Allow the pudding to cool to room temperature before transferring it to the refrigerator.
  7. Chill the pudding in the refrigerator for at least 2 hours, or until it is fully set. The pudding should be firm to the touch and hold its shape when scooped. This chilling time allows the flavors to meld and the texture to become silky and smooth.
  8. Serve the Brasileiro Milk Pudding cold, directly from the refrigerator. You can garnish with a sprinkle of sugar or a drizzle of syrup if desired. Enjoy this creamy and comforting dessert with family and friends, as is traditional in Brazilian homes.
