Brigadeiros are a beloved staple of Brazilian birthday celebrations, a tradition as sweet as the treat itself. The hallmark of a perfect brigadeiro is its rich, fudgy texture, a balance of sweetened condensed milk and cocoa powder that melts in your mouth. Ingredients

  • 1 cansweetened condensed milk
  • 2 tbspcocoa powder
  • 1 tbspbutter
  • chocolate sprinklesfor rolling

Method

  1. Start by placing 1 tablespoon of butter in a medium-sized non-stick saucepan. Allow the butter to melt completely over low heat. This will prevent the Brigadeiros from sticking to the pan and ensure a smooth texture.
  2. Once the butter has melted, add 1 can of sweetened condensed milk to the saucepan. Use a spatula to stir the mixture continuously, ensuring that the milk doesn't scorch at the bottom. This step is crucial for achieving the right consistency.
  3. Sift 2 tablespoons of cocoa powder into the saucepan to avoid lumps. Stir the mixture thoroughly until the cocoa powder is fully incorporated and the color is uniform. The mixture should be smooth and glossy, indicating that the ingredients are well combined.
  4. Increase the heat to medium and continue to stir the mixture constantly. Cook until the mixture thickens and starts to pull away from the sides of the pan. You should be able to see the bottom of the pan when you drag the spatula through the mixture. This is your cue that the Brigadeiro mixture is ready.
  5. Remove the saucepan from the heat and let the mixture cool for about 10 minutes. This will make it easier to handle when shaping the Brigadeiros.
  6. Once the mixture is cool enough to handle, grease your hands with a little butter to prevent sticking. Scoop small amounts of the mixture and roll them into balls about the size of a cherry. The texture should be firm but pliable.
  7. Pour chocolate sprinkles onto a plate. Roll each Brigadeiro ball in the sprinkles until fully coated. This adds a delightful crunch and completes the traditional look of the Brigadeiros.
  8. Arrange the Brigadeiros on a serving plate. They are best served at room temperature, allowing the flavors to meld beautifully. Enjoy sharing this sweet treat with family and friends!
