Gajrela

Serves 4 to 6 vegetarian

Gajrela

Gajrela emerges from the heart of Punjab's winter kitchens, where cold days call for warmth on the table. This dish is a quintessential winter delight, crafted with the loving hands of family cooks who know the importance of a generous spirit. Salt is added with instinct, and the richness of ghee flows freely, making it a staple during cozy gatherings. It's a dish that embodies the warmth of home and the tradition of sharing.

Expect the sweet earthiness of carrots, tenderly cooked in milk, to meld with the fragrant allure of cardamom. This comforting dessert is an indulgent embrace of creamy sweetness, suffused with the golden richness of ghee. The texture is soft yet satisfyingly dense, a perfect end to a hearty meal on a chilly day.

Ingredients

  • 1 kgcarrots
  • 500 mlmilk
  • 100 gsugar
  • 4 tbspghee
  • 4cardamom pods

Method

  1. Begin by thoroughly washing and peeling 1 kg of carrots. Grate them using a medium-sized grater to ensure even cooking. This will allow the carrots to cook uniformly and absorb flavors better.
  2. In a large, heavy-bottomed pot, heat 4 tbsp of ghee over medium heat. Once the ghee is melted and aromatic, add the grated carrots. Stir frequently to coat the carrots evenly with ghee and cook until they soften slightly and release a sweet aroma, about 5-7 minutes.
  3. Add 500 ml of milk to the pot with the carrots. Stir well to combine and bring the mixture to a gentle simmer. The milk should cover the carrots completely, allowing them to cook and absorb the creamy richness.
  4. Crush 4 cardamom pods slightly to release their flavor and add them to the pot. Continue to simmer the mixture on low heat, stirring occasionally, until the milk reduces and thickens, and the carrots are tender and fully cooked. This should result in a creamy consistency where the milk is mostly absorbed.
  5. Once the milk has reduced significantly, add 100 g of sugar to the pot. Stir well to ensure the sugar dissolves completely and the mixture becomes glossy. Continue to cook until the sugar is fully incorporated and the gajrela reaches a thick, pudding-like consistency.
  6. Taste the gajrela and adjust the sweetness if necessary, keeping in mind that it should be rich and mildly sweet. Remove the pot from heat once the desired consistency is achieved, and the mixture is thick and creamy.
  7. Allow the gajrela to cool slightly before serving. It can be enjoyed warm or at room temperature, making it perfect for sharing at the table during a cozy gathering.
