Gefüllte Äpfel

Serves 4 to 6 Dessert vegetarian, Desserts

Gefüllte Äpfel

Gefüllte Äpfel, or stuffed apples, grace German tables as autumn evenings draw in, offering warmth and comfort. A staple of the season, this dish is embraced across the country, from bustling city kitchens to quiet countryside homes. It’s a simple yet cherished tradition, reflecting the seasonal bounty and the German knack for turning humble ingredients into something memorable.

The taste is a delightful interplay of sweet and spiced, with raisins and almonds nestled inside tender baked apples, all harmonized by butter and cinnamon. Each bite is a warm embrace, often enjoyed with a generous pour of vanilla sauce, wrapping up a meal with a whisper of indulgence.

Ingredients

  • 4baking apples
  • 60 graisins
  • 40 gchopped almonds
  • 40 gbutter
  • 40 gsugar
  • 1 tspcinnamon
  • vanilla sauce — to serve

Method

  1. Preheat your oven to 180°C (356°F) to ensure it's ready for baking. Take 40 g of butter out of the fridge and let it come to room temperature, which makes it easier to mix with other ingredients later.
  2. Wash and core the 4 baking apples, being careful not to cut through the bottom. This creates a cavity for the filling while keeping the apple intact. Use a small paring knife or an apple corer for precision.
  3. In a mixing bowl, combine 60 g of raisins, 40 g of chopped almonds, 40 g of sugar, and 1 teaspoon of cinnamon. Mix these ingredients thoroughly to ensure the flavors are evenly distributed. The sugar will help to caramelize the filling as it bakes.
  4. Add the softened butter to the raisin and almond mixture, using a spoon or your hands to blend it well. The butter should coat the dry ingredients, helping them stick together and enhancing the flavor.
  5. Stuff each apple with the prepared filling, pressing it down gently to pack it in. Place the apples upright in a baking dish, ensuring they are stable and not touching each other to allow even cooking.
  6. Bake the apples in the preheated oven for about 25-30 minutes. You'll know they're done when the apples are tender and the skin is slightly wrinkled, and the filling is golden brown and fragrant.
  7. While the apples are baking, prepare the vanilla sauce according to your preferred recipe or package instructions. The sauce should be smooth and slightly thickened, ready to complement the warm apples.
  8. Once the apples are baked, remove them from the oven and let them cool slightly. Serve the warm apples drizzled with vanilla sauce, allowing the sweet and creamy sauce to enhance the spiced filling.
