Serves 4 to 6 Dessert vegetarian, Desserts

Honey with Fresh Ayib

Honey with Fresh Ayib is a comforting dish often enjoyed at the end of a meal in Ethiopian homes, where its simplicity and warmth bring a sense of closure to the day. This dish is a staple of home cooking, served unpretentiously to family and friends as a sweet and satisfying ending. Its straightforward preparation makes it a beloved choice for everyday dining, ensuring everyone leaves the table content.

The dish offers a delicate balance of creamy and sweet, with the fresh ayib cheese's mild tanginess perfectly complemented by the rich, floral notes of honey. A hint of ground cardamom adds a subtle spice, enhancing the overall flavor without overpowering it. Whether enjoyed with injera or dabo, each bite is meant to be savored slowly, a gentle reminder of simple pleasures and the beauty of uncomplicated flavors.

Ingredients

  • 2 cupsfresh ayib cheese — well drained
  • 4 tbsphoney — preferably comb honey
  • 1 pinchground cardamom — optional
  • 4 piecesinjera or dabo — for scooping

Method

  1. Begin by placing 2 cups of fresh ayib cheese into a medium-sized mixing bowl. Use a spoon or spatula to gently break up any large clumps, ensuring the cheese is evenly crumbled. This will help the honey mix more uniformly with the cheese.
  2. Add 4 tablespoons of honey to the crumbled ayib. Use a spatula to fold the honey into the cheese, ensuring that each piece of cheese is lightly coated. The mixture should look glossy and slightly sticky, indicating that the honey has been well incorporated.
  3. Sprinkle a pinch of ground cardamom over the honey and cheese mixture. Gently stir the cardamom into the mixture, ensuring even distribution. The cardamom should impart a warm, aromatic fragrance that complements the sweetness of the honey.
  4. Arrange 4 pieces of injera or dabo on a serving platter. If using injera, you can tear it into smaller pieces for easier serving. The bread will serve as a base to scoop up the honeyed cheese.
  5. Spoon the honey and ayib mixture onto the center of the injera or dabo. Spread it out slightly, but leave some space around the edges to allow for easy handling. The cheese should sit in a soft mound, inviting and ready to be enjoyed.
  6. Finish by drizzling a little extra honey over the top of the cheese for added sweetness and visual appeal. Serve immediately while the flavors are fresh, allowing the honey's aroma to draw everyone to the table. Enjoy the dish at room temperature, appreciating the contrast between the soft cheese and the sweet, fragrant honey.
