Indian Syrup Cake

Indian Syrup Cake, a cherished treat in many Indian households, is often prepared when family and friends gather, particularly during festive occasions or leisurely weekend afternoons. This cake, known for its simplicity and warmth, reflects the generous and communal spirit of Indian home cooking. Embracing the tradition of cooking by feel rather than strict measurement, it invites cooks to trust their instincts, especially when it comes to balancing salt and fat.

The cake delivers a delightful contrast between its tender crumb and the luscious syrup that thoroughly soaks through. As you take a bite, the buttery richness and sweetness dance harmoniously on the palate. The semolina provides a subtle, satisfying texture, making each slice a comforting indulgence that encourages sharing among loved ones. Whether served warm or at room temperature, it is a sweet reminder of home and hospitality.

Ingredients

  • 200 gsemolina
  • 150 gsugar
  • 100 gbutter
  • 3eggs
  • syrupto soak

Method

  1. Begin by bringing 100 g of butter to room temperature. This will make it easier to cream with sugar. Also, take 3 eggs out of the refrigerator and let them sit at room temperature. This helps them blend more smoothly into the batter, ensuring a uniform texture.
  2. In a large mixing bowl, cream together the softened butter and 150 g of sugar until the mixture is light and fluffy. Use a wooden spoon or an electric mixer on medium speed. The sugar should be fully dissolved, and the mixture should be pale in color, indicating that enough air has been incorporated.
  3. Gradually add the 3 room-temperature eggs to the creamed butter and sugar mixture, one at a time. Beat well after each addition to ensure the eggs are fully incorporated. This step is crucial for achieving a smooth batter without any curdling.
  4. Slowly fold in 200 g of semolina into the egg mixture using a spatula. Mix gently until the semolina is fully combined and the batter is smooth. Be careful not to overmix, as this can lead to a dense cake.
  5. Pour the batter into a greased baking dish, smoothing the top with the back of a spoon. Place the dish in a preheated oven at 180°C (350°F). Bake until the cake is golden brown and a skewer inserted into the center comes out clean, indicating that the cake is fully cooked.
  6. While the cake is baking, prepare the syrup to soak the cake. Ensure the syrup is warm but not boiling, as this will allow it to be absorbed more easily by the cake.
  7. Once the cake is baked, remove it from the oven and let it cool slightly in the pan. While the cake is still warm, pour the prepared syrup evenly over the top. Allow the cake to absorb the syrup completely, resulting in a moist and flavorful texture.
  8. Serve the Indian Syrup Cake warm, allowing the flavors to meld beautifully. This cake is perfect for sharing, embodying the spirit of Indian home cooking.
