Lucuma Ice Cream

Lucuma Ice Cream is a cherished dessert in Peru, especially beloved in Lima where it graces the menus of local ice cream parlors. It's prepared with a generous hand, emphasizing richness and a balance of flavors that speak to the heart of Peruvian culinary tradition. This recipe captures the essence of those parlor experiences, yet it's crafted for the home cook, ensuring that every scoop reflects the authenticity of a family table.

The ice cream is a celebration of lucuma's unique flavor, delivering a creamy texture that feels indulgent and comforting. With a subtle sweetness from the sugar and a whisper of vanilla, it offers a harmonious blend that is both exotic and familiar. A pinch of salt enhances the natural flavors, making each bite an invitation to savor the simplicity and depth of this Peruvian delight.

Ingredients

  • 200 glucuma pulp
  • 200 mlcream
  • 80 gsugar
  • 1 tspvanilla
  • 1 pinchsalt

Method

  1. Begin by preparing the lucuma pulp. If using frozen pulp, allow 200 g of it to thaw completely at room temperature. This will ensure that it blends smoothly with the other ingredients and does not form ice crystals in the final ice cream.
  2. In a medium saucepan, combine 200 ml of cream and 80 g of sugar. Place the saucepan over low heat, stirring gently with a wooden spoon until the sugar dissolves completely. The mixture should be warm, not hot, to avoid scalding the cream.
  3. Once the sugar is dissolved, add the thawed lucuma pulp to the saucepan. Stir continuously until the pulp is fully incorporated into the cream mixture. The mixture should be smooth and slightly thickened, with no visible lumps of lucuma.
  4. Remove the saucepan from the heat and stir in 1 teaspoon of vanilla extract and a pinch of salt. The vanilla enhances the natural flavor of the lucuma, while the salt balances the sweetness. Mix until everything is well combined.
  5. Allow the mixture to cool to room temperature. Once cooled, transfer it to a blender and blend until completely smooth. This step ensures a creamy texture without any graininess from the lucuma pulp.
  6. Pour the blended mixture into an ice cream maker and churn according to the manufacturer's instructions. The ice cream should thicken and take on a soft-serve consistency, indicating that it is ready.
  7. Transfer the churned ice cream to an airtight container and place it in the freezer for at least 4 hours, or until it is firm enough to scoop. This resting period allows the flavors to meld and the texture to set properly.
  8. Serve the lucuma ice cream in bowls or cones, garnished with a sprinkle of nuts or a drizzle of syrup if desired. Enjoy it at a temperature that allows the flavors to shine, typically just a few minutes out of the freezer.
