Marzipankartoffeln, or marzipan potatoes, are a cherished treat that graces Christmas tables across Germany. German families often prepare these sweet morsels with ease, using butter or clarified butter and seasoning with a careful hand. This recipe reflects the home-cooked version that many treasure, devoid of any fuss or pretense.

These little delights, crafted from marzipan, powdered sugar, cocoa powder, and a hint of rum, offer a rich and smooth texture that melts in your mouth. Their exterior, dusted with cocoa, provides a slight bitterness that perfectly balances the sweetness inside. Ingredients

  • 250 gmarzipan
  • 50 gpowdered sugar
  • 2 tbspcocoa powder — for rolling
  • 1 tbsprum — optional

Method

  1. Begin by ensuring your marzipan (250 g) is at room temperature. This will make it easier to knead and blend with other ingredients. If it's too firm, let it sit out for about 30 minutes until it feels pliable to the touch.
  2. In a medium mixing bowl, combine the room-temperature marzipan with 1 tablespoon of rum. Knead the mixture with your hands until the rum is fully incorporated and the marzipan is smooth and slightly sticky. This step ensures the flavor is evenly distributed throughout the marzipan.
  3. Sift 50 g of powdered sugar into the marzipan mixture. Continue to knead until the sugar is fully absorbed and the mixture becomes smooth and slightly firmer. The powdered sugar will help to balance the sweetness and firm up the texture.
  4. In a separate small bowl, sift 2 tablespoons of cocoa powder. This will be used to coat the marzipan balls, giving them their characteristic 'potato' appearance.
  5. Pinch off small portions of the marzipan mixture, about the size of a walnut, and roll them into smooth balls between your palms. The size should be consistent to ensure even coating and presentation.
  6. Roll each marzipan ball in the sifted cocoa powder until completely coated. The cocoa powder should adhere to the surface, giving the balls a uniform, dusty brown appearance reminiscent of small potatoes.
  7. Once all the marzipan balls are coated, place them on a tray or plate. Let them sit at room temperature for about 30 minutes to allow the cocoa powder to set slightly, enhancing the appearance and texture.
  8. Serve the Marzipankartoffeln at room temperature. This allows the flavors to be at their best, with a tender, melt-in-your-mouth texture that is perfect for enjoying as a sweet treat.
