Quarkspeise mit Früchten

Serves 4 to 6 Dessert vegetarian, Desserts

Quarkspeise mit Früchten

Quarkspeise mit Früchten is a beloved staple across German home kitchens, effortlessly bridging the gap between everyday meals and special occasions. Traditionally enjoyed as a refreshing dessert or a sweet afternoon treat, this dish embodies the simplicity and warmth of German culinary traditions, where butter or clarified butter is used without fanfare, and salt is seasoned by instinct rather than measure. A second helping is often encouraged, reflecting the generous spirit found in many family kitchens.

Expect a creamy, velvety texture from the quark and cream, subtly sweetened with sugar and vanilla. The mixed berries add a burst of tartness, while a hint of lemon zest brings a bright, citrusy finish. Each spoonful should feel like a balance between rich creaminess and the fresh, lively pop of fruit, leaving you eager for more.

Ingredients

  • 500 gquark
  • 100 mlcream
  • 60 gsugar
  • 1 tspvanilla
  • 300 gmixed berries
  • to finishlemon zest

Method

  1. Begin by taking 500 g of quark and 100 ml of cream out of the refrigerator. Allow them to come to room temperature, which will make them easier to mix smoothly. This step is crucial for achieving the right texture in your Quarkspeise.
  2. In a large mixing bowl, combine the quark, cream, 60 g of sugar, and 1 teaspoon of vanilla. Use a whisk to blend these ingredients together until the mixture is smooth and creamy. The sugar should be fully dissolved, and the mixture should have a uniform texture without any lumps.
  3. Prepare 300 g of mixed berries by washing them thoroughly under cold water. Pat them dry with a clean kitchen towel to remove excess moisture. This ensures that the berries don't water down the quark mixture.
  4. Gently fold the mixed berries into the quark mixture using a spatula. Be careful not to crush the berries, as you want them to remain whole and retain their shape. This will give the dish a pleasant texture and bursts of fruity flavor.
  5. Transfer the mixture into a serving dish or individual bowls. Cover with plastic wrap and chill in the refrigerator for at least 30 minutes. This resting time allows the flavors to meld and the texture to firm up slightly.
  6. Before serving, zest a lemon over the top of the Quarkspeise. The lemon zest will add a fresh, citrusy aroma that complements the sweetness of the berries and the creaminess of the quark. Serve chilled for the best texture and flavor experience.
