Shahi Tukra

Serves 4 to 6 vegetarian, Ramadan, Iftar

Shahi Tukra

Shahi Tukra is a beloved dessert often gracing iftar tables during Ramadan in Pakistan. This dish transforms simple bread slices into a rich, indulgent treat by soaking them in creamy rabdi and frying them in ghee. It's a homey dessert, prepared with a pinch of saffron for aroma and a sprinkle of pistachios for crunch.

The taste is a delightful balance of sweetness and richness, with the saffron lending a subtle floral note. The bread becomes soft yet slightly crisp from the ghee, while the rabdi adds a luscious creaminess. It's a dish meant for sharing, bringing warmth and sweetness to family gatherings.

Ingredients

  • 6bread slices
  • 500 mlrabdi
  • 4 tbspghee
  • 1 pinchsaffron
  • 2 tbsppistachios
  • 80 gsugar

Method

  1. Begin by preparing the bread slices. Cut the 6 bread slices diagonally to form triangles. In a large frying pan, heat 4 tbsp of ghee over medium heat until it melts and starts to shimmer. Fry the bread slices in batches, ensuring each side turns golden brown and crisp. Remove the fried bread and place them on a paper towel-lined plate to drain excess ghee.
  2. In a small bowl, soak a pinch of saffron in 2 tablespoons of warm water. This will release the vibrant color and aroma of the saffron, enhancing the final dish. Set aside to allow the saffron to infuse.
  3. In a separate saucepan, pour 500 ml of rabdi and place it over low heat. Stir occasionally to prevent it from sticking to the bottom. Allow it to simmer gently until it thickens slightly and becomes creamy, which should take on a rich, off-white hue. This step is crucial for achieving the authentic texture of Shahi Tukra.
  4. Once the rabdi is ready, add the saffron-infused water to the saucepan. Stir well to incorporate the saffron evenly, giving the rabdi a beautiful golden color and a fragrant aroma.
  5. In a small pan, toast 2 tbsp of pistachios over low heat until they become slightly golden and release their nutty aroma. Remove from heat and roughly chop them to use as garnish later.
  6. To assemble the Shahi Tukra, arrange the fried bread slices in a single layer on a serving dish. Pour the warm rabdi over the bread, ensuring each piece is well-soaked and covered. Allow it to sit for a few minutes so the bread absorbs the rabdi, becoming soft yet retaining a slight crispness at the edges.
  7. Sprinkle the chopped pistachios over the top for a crunchy contrast. Serve the Shahi Tukra warm, allowing the flavors to meld beautifully, making it a perfect dish for sharing at the iftar table.
