Shrikhand

Serves 4 to 6 vegetarian

Shrikhand

Shrikhand hails from the western states of Maharashtra and Gujarat, where it is often enjoyed as a dessert or a cooling accompaniment to spicy meals. It's a staple during festive occasions and family gatherings, bringing a touch of sweetness to the table. This home-style version reflects the way Indian families truly prepare it, with a touch of salt and a generous hand with the fat, making it a shared delight.

The texture of Shrikhand should be luxuriously smooth, achieved by using hung yogurt, and it carries the richness of saffron and the warmth of cardamom. Sweetness from sugar balances these flavors, while a sprinkle of pistachios adds a pleasing crunch. Each spoonful is a creamy indulgence, a harmonious blend of aromatic spices and silky yogurt.

Ingredients

  • 500 ghung yogurt
  • 80 gsugar
  • 1 pinchsaffron
  • 4cardamom pods
  • 1 tbsppistachios

Method

  1. Begin by ensuring the hung yogurt (500 g) is at room temperature. This helps in achieving a smooth and creamy texture when mixing with other ingredients. If the yogurt is too cold, it may not blend well, resulting in a lumpy consistency.
  2. In a small bowl, combine 1 pinch of saffron with a tablespoon of warm milk or water. Let it soak for about 5 minutes. This allows the saffron to release its vibrant color and aroma, which will infuse the Shrikhand with a rich golden hue and a subtle floral fragrance.
  3. Using a mortar and pestle, crush 4 cardamom pods to a fine powder. This will ensure the cardamom is evenly distributed throughout the yogurt, imparting its sweet, spicy notes effectively.
  4. In a large mixing bowl, add the room temperature hung yogurt and 80 g of sugar. Whisk them together using a hand whisk or a spatula until the sugar is completely dissolved and the mixture is smooth and creamy. The yogurt should have a glossy appearance and a uniform texture.
  5. Stir in the saffron mixture and the crushed cardamom into the yogurt. Mix thoroughly until the saffron is evenly distributed, giving the yogurt a pale yellow color. The aroma of saffron and cardamom should be prominent, indicating they are well incorporated.
  6. Transfer the mixture to a serving bowl or individual dessert cups. Cover and chill in the refrigerator for at least 2 hours. The chilling process helps the flavors to meld and the texture to set, resulting in a thick, creamy dessert.
  7. Before serving, garnish with 1 tablespoon of chopped pistachios. The pistachios add a delightful crunch and a pop of color, enhancing both the texture and the visual appeal of the Shrikhand. Serve chilled to enjoy the full depth of flavors.
