Ingredients

  • 4 piecesday-old injera — torn
  • 3 tbsphoney
  • 1 tbspniter kibbeh — optional

Method

  1. Tear the 4 pieces of day-old injera into bite-sized pieces. This will allow the injera to absorb the flavors more evenly and create a cohesive texture in the dish. Set the torn injera aside in a large mixing bowl.
  2. In a medium-sized saucepan, melt 1 tablespoon of niter kibbeh over low heat. Stir gently until the spiced butter is fully liquefied and aromatic, which should take about 2 to 3 minutes. This step infuses the butter with its rich, spiced flavor, essential for the dish.
  3. Once the niter kibbeh is melted, add the torn injera pieces to the saucepan. Stir continuously, ensuring each piece is well-coated with the spiced butter. The injera should start to soften and become slightly glossy, indicating it's absorbing the flavors properly.
  4. Drizzle 3 tablespoons of honey over the injera in the saucepan. Mix thoroughly to ensure the honey is evenly distributed, creating a sweet and sticky coating on the injera. The honey should blend seamlessly with the niter kibbeh, forming a harmonious sweet base.
  5. Continue to cook the mixture over low heat, stirring occasionally, until the injera is fully softened and the honey has thickened slightly, about 5 minutes. The injera should be tender and the honey should cling to it, giving off a warm, sweet aroma.
  6. Transfer the Sweet Firfir with Honey to a serving dish. You can serve it warm or let it cool to room temperature, depending on your preference. The dish should have a soft, slightly sticky texture, with the sweetness of the honey and the richness of the niter kibbeh coming through in every bite.
