Ingredients

  • 1 cupbarley flour
  • 2 cupswater
  • 3 tbsphoney
  • 1 tbspniter kibbeh — optional

Method

  1. In a medium-sized saucepan, combine 1 cup of barley flour with 2 cups of water. Use a whisk to mix them thoroughly, ensuring there are no lumps. This initial mixture should be smooth and slightly thick, resembling a thin batter.
  2. Place the saucepan over medium heat and begin stirring continuously with a wooden spoon. As the mixture heats, it will start to thicken. Continue stirring until it reaches a consistency similar to thick porridge, with a smooth and creamy texture.
  3. Once the mixture has thickened, reduce the heat to low. Add 1 tablespoon of niter kibbeh to the saucepan. Stir it in thoroughly, allowing the spiced butter to melt completely and infuse the genfo with its rich aroma.
  4. Continue cooking on low heat, stirring occasionally, until the genfo becomes glossy and pulls away slightly from the sides of the pan. This indicates that the mixture is well-cooked and has reached the desired consistency.
  5. Remove the saucepan from the heat and transfer the genfo to a serving bowl. Drizzle 3 tablespoons of honey over the top, allowing it to seep into the warm genfo. The honey should create a sweet, fragrant glaze on the surface.
  6. Serve the Sweet Genfo with Honey warm or at room temperature, letting the honey's sweetness complement the nutty flavor of the barley. Enjoy it as a comforting dish that brings the essence of Ethiopian home cooking to your table.
