Ingredients

  • 500 gseasonal fruit
  • 150 gsugar
  • 200 mlwater
  • 1 stickcinnamon

Method

  1. Start by preparing 500 g of seasonal fruit. Choose a variety of fruits such as mangoes, pineapples, or bananas, and peel and chop them into bite-sized pieces. Set the fruit aside in a bowl.
  2. In a medium saucepan, combine 150 g of sugar and 200 ml of water. Place the saucepan over medium heat and stir gently until the sugar completely dissolves, creating a clear syrup. Add 1 stick of cinnamon to the syrup and let it infuse as the mixture comes to a gentle simmer.
  3. Once the syrup is simmering, add the prepared fruit to the saucepan. Stir gently to coat the fruit evenly with the syrup, ensuring the cinnamon stick is submerged to impart its flavor.
  4. Reduce the heat to low and allow the fruit to cook slowly in the syrup. Stir occasionally, making sure the fruit softens but retains its shape. The compote is ready when the fruit is tender and the syrup has thickened slightly, with a fragrant aroma from the cinnamon.
  5. Remove the saucepan from the heat and let the compote cool slightly. The syrup will continue to thicken as it cools, enveloping the fruit in a glossy glaze.
  6. Serve the Thai Fruit Compote warm or at room temperature. It can be enjoyed on its own or as a topping for desserts like ice cream or yogurt, offering a sweet and aromatic finish to any meal.
