Ingredients

  • 500 gseasonal fruit
  • 150 gsugar
  • 200 mlwater
  • 1 stickcinnamon

Method

  1. Begin by selecting 500 g of seasonal fruit, such as mango, pineapple, or papaya. Peel, core, and cut the fruit into bite-sized pieces. This ensures even cooking and allows the flavors to meld together.
  2. In a medium-sized saucepan, combine 150 g of sugar and 200 ml of water. Place the saucepan over medium heat and stir gently until the sugar completely dissolves, creating a clear syrup. This forms the base of your compote.
  3. Add 1 stick of cinnamon to the syrup. Allow it to simmer for a few minutes, which will infuse the syrup with a warm, spicy aroma that complements the sweetness of the fruit.
  4. Carefully add the prepared fruit pieces to the saucepan. Stir gently to coat the fruit evenly with the syrup. Continue to cook over medium heat, allowing the fruit to soften and absorb the cinnamon-infused syrup.
  5. Watch for the fruit to become tender but not mushy, maintaining its shape. The syrup should thicken slightly and take on a glossy sheen, indicating that the compote is ready.
  6. Remove the saucepan from the heat and let the compote cool slightly. This will allow the flavors to meld further and the syrup to thicken as it cools.
