Zarda

Serves 4 to 6 vegetarian

Zarda

Zarda is a cherished Pakistani dessert, often gracing the tables at weddings and special celebrations. Traditionally, the dish is prepared with a generous hand, using ingredients that are both rich and aromatic. This version brings the essence of those grand occasions into the home kitchen, capturing the spirit of communal feasting and celebration.

The taste of Zarda is a delightful blend of sweetness and warmth, with each grain of basmati rice infused with the flavors of cardamom and a hint of orange. The ghee adds a luscious depth, while slivers of almonds provide a satisfying crunch, creating a dessert that is both indulgent and comforting.

Ingredients

  • 400 gbasmati rice
  • 150 gsugar
  • 4 tbspghee
  • 1 pinchorange food color
  • 2 tbspalmonds
  • 4cardamom pods

Method

  1. Rinse 400 g basmati rice under cold water until the water runs clear. This removes excess starch and ensures the grains remain separate when cooked. Soak the rice in water for about 30 minutes to allow it to absorb some moisture and cook evenly later.
  2. In a large pot, bring water to a boil and add the soaked rice. Cook the rice until it is about 70% done; the grains should be firm but not hard when bitten. Drain the rice and set it aside.
  3. In a separate large, heavy-bottomed pot, melt 4 tbsp ghee over medium heat. Add 4 cardamom pods and sauté until fragrant, which should take about a minute. This step releases the aromatic oils from the cardamom, infusing the ghee with flavor.
  4. Add the partially cooked rice to the pot with the ghee and cardamom. Sprinkle 1 pinch of orange food color over the rice and gently mix to distribute the color evenly. Be careful not to break the rice grains; use a gentle folding motion.
  5. Sprinkle 150 g sugar evenly over the rice. Cover the pot with a tight-fitting lid and reduce the heat to low. Allow the rice to steam for about 10 minutes, during which the sugar will dissolve and coat the rice, and the grains will become tender and fully cooked.
  6. In a small pan, lightly toast 2 tbsp almonds over medium heat until they are golden brown and aromatic. This enhances their flavor and adds a crunchy texture to the dish.
  7. Once the rice is done, fluff it gently with a fork to separate the grains. Top with the toasted almonds for added texture and flavor. Serve the Zarda warm, allowing the sweet aroma and vibrant color to invite everyone to the table.
