Ingredients

  • 2 cupsfresh ayib cheese

Method

  1. Begin by gathering your ingredients: 2 cups of fresh ayib cheese, 1 tablespoon of mitmita or berbere, and 1 tablespoon of niter kibbeh. Ensure the ayib cheese is at room temperature, as this will make it easier to mix and will help the flavors meld together more effectively.
  2. In a medium-sized mixing bowl, add the room-temperature ayib cheese. Use a wooden spoon or a sturdy spatula to gently break up the cheese, making it easier to incorporate the other ingredients. The cheese should be crumbly yet moist, providing a perfect base for the dip.
  3. Melt 1 tablespoon of niter kibbeh in a small saucepan over low heat. Once melted, pour the niter kibbeh over the ayib cheese in the mixing bowl. The warm, spiced butter will infuse the cheese with a rich aroma and flavor, essential for an authentic taste.
  4. Add 1 tablespoon of mitmita or berbere to the cheese mixture.
