Serves 4 to 6 vegan

Imli Chutney

Imli Chutney, a staple of Pakistan's vibrant street food scene, finds its roots in the bustling chaat stalls where flavors mingle as freely as the people. At home, it’s a cherished accompaniment, crafted with the same bold hand that graces the street vendors' tables. This chutney is an essential part of any chaat experience, bringing a taste of the lively markets into the comfort of your kitchen.

The chutney's flavor is a symphony of contrasts—tangy tamarind meets the deep sweetness of jaggery, while a hint of chili powder adds a warming kick. Roasted cumin lends an earthy depth, and black salt weaves through with its unique mineral tang. It’s a sensory delight, ready to uplift your snack table with its vibrant allure.

Ingredients

  • 100 gtamarind
  • 80 gjaggery
  • 1 tsproasted cumin
  • 1/2 tspchili powder
  • 1/2 tspblack salt

Method

  1. Begin by soaking 100 g of tamarind in 250 ml of warm water for about 15 minutes. This will soften the tamarind, making it easier to extract the pulp. Once softened, use your hands to mash the tamarind in the water until the pulp is well mixed and the seeds and fibers are separated.
  2. Strain the tamarind mixture through a fine sieve into a medium saucepan, pressing down with a spoon to extract as much pulp as possible. Discard the seeds and fibers left in the sieve. This step ensures a smooth base for your chutney.
  3. Place the saucepan on medium heat and add 80 g of jaggery to the tamarind pulp. Stir continuously until the jaggery dissolves completely, and the mixture begins to thicken slightly. The jaggery will add sweetness and a deep, rich color to the chutney.
  4. Once the jaggery is fully dissolved, add 1 tsp of roasted cumin and 1/2 tsp of chili powder to the saucepan. Stir well to combine the spices evenly throughout the mixture. The roasted cumin will impart a warm, earthy aroma, while the chili powder adds a hint of heat.
  5. Add 1/2 tsp of black salt to the mixture, stirring to incorporate it fully. Black salt provides a distinctive tangy flavor that balances the sweetness of the jaggery. Taste the chutney and adjust the salt if needed, keeping in mind that the flavors will develop further as it cools.
  6. Remove the saucepan from heat and allow the chutney to cool to room temperature. As it cools, the chutney will thicken to a perfect dipping consistency. Once cooled, transfer the chutney to a serving bowl.
  7. Let the chutney rest briefly to allow the flavors to meld together. Serve the Imli Chutney cool, as a delicious accompaniment to your favorite snacks or chaat dishes.
