Method

  1. Begin by preparing the garlic. Peel and finely chop 2 cloves of garlic. Use the side of your knife to crush the garlic into a paste, as this will help release its full flavor into the dip.
  2. In a mixing bowl, combine 400 g of yogurt with the garlic paste. Use a whisk or a spoon to blend them together until the mixture is smooth and the garlic is evenly distributed.
  3. Next, prepare your herbs. Choose a mix of fresh herbs such as shiso, mitsuba, or parsley. Finely chop about a handful of these herbs, ensuring they are small enough to blend well into the yogurt.
  4. Add the chopped herbs to the yogurt mixture. Use a spoon to fold the herbs into the yogurt gently, ensuring they are evenly distributed throughout the mixture.
  5. Slowly drizzle in olive oil while stirring the mixture. Aim for a smooth, creamy consistency. The oil should blend in without separating, adding a silky texture to the dip.
  6. Season the dip with fine sea salt to taste. Start with a small pinch, mix well, and taste by spreading a little on a piece of bread. Adjust the salt as needed, keeping in mind that the flavors will meld further as the dip rests.
  7. Allow the dip to rest briefly in the refrigerator. This resting period helps the flavors to meld together, enhancing the overall taste. Serve the dip cool, drizzled with a little more olive oil on top for a finishing touch.
