Mint Chutney

Mint Chutney

Mint Chutney, a vibrant accompaniment, finds its rightful place beside the sizzling allure of kebab platters across Pakistani tables. Rooted in the culinary traditions of home cooks, this version captures the essence of how it is lovingly prepared in households where salt is judged by hand and flavor is paramount. It is a dish often made for gatherings, reflecting a shared culinary experience that brings a comforting familiarity to any meal.

This chutney bursts with the verdant freshness of mint and cilantro, delivering a bright, herbaceous punch with a hint of heat from green chili. The lemon juice adds a zesty tang, amplifying the flavors and providing a refreshing counterbalance to richer dishes. The consistency should be smooth yet vibrant, a perfect partner to grilled meats, enhancing each bite with its lively, aromatic presence.

Ingredients

  • 2 cupsmint
  • 1 cupcilantro
  • 1green chili
  • 1 tbsplemon juice
  • to tastefine sea salt

Method

  1. Start by washing 2 cups of mint and 1 cup of cilantro thoroughly under cool running water to remove any dirt or grit. Shake off excess water and pat them dry with a clean kitchen towel. This ensures that the herbs are fresh and vibrant, which is essential for the chutney's flavor and color.
  2. Roughly chop the mint and cilantro, and place them in a blender or a mortar and pestle. Add 1 green chili, adjusting the amount based on your spice preference. Blend or pound the mixture until it forms a coarse paste, ensuring the herbs are well integrated but still retain some texture.
  3. Slowly add 1 tablespoon of lemon juice to the herb mixture. If using a blender, pulse gently to incorporate the juice without over-blending. The lemon juice adds acidity, balancing the flavors and brightening the chutney's taste.
  4. Season the chutney with fine sea salt to taste. Start with a small pinch, blend, and taste using a piece of bread. Adjust the salt gradually until the flavors are balanced and the chutney has a savory depth that complements the freshness of the herbs.
  5. Allow the chutney to rest for about 10 minutes at room temperature. This brief resting period allows the flavors to meld together, enhancing the overall taste. Serve the chutney cool, as a refreshing accompaniment to kebabs or other dishes.
