Quark mit Leinöl

Serves 4 to 6 Dip vegetarian, Appetizers

Quark mit Leinöl

Quark mit Leinöl is a staple of eastern German home cooking, embodying a straightforward approach that celebrates simplicity and comfort. This dish is traditionally enjoyed as a light meal or hearty snack, with family cooks often passing down their versions through generations. Butter or clarified butter finds its way in without ceremony, and the salt is measured by instinct, encouraging an unapologetic second helping.

The dish offers a creamy texture from the quark, enriched by the nutty depth of linseed oil. Sharp onion and fresh chives bring a vibrant freshness, while the boiled potatoes provide a satisfying base. Each mouthful is a balance of richness and brightness, seasoned to your taste with fine sea salt and black pepper.

Ingredients

  • 400 gquark
  • 3 tbsplinseed oil
  • 1onion — finely diced
  • fresh chivessnipped
  • boiled potatoes — to serve
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing the onion. Peel and finely chop the onion into small, even pieces. This ensures that the onion blends well into the quark mixture, providing a balanced flavor without overwhelming bites of onion.
  2. In a medium mixing bowl, add 400 g of quark. Pour in 3 tablespoons of linseed oil. Use a whisk or a fork to stir the mixture until it reaches a smooth consistency. The quark should be creamy and well-blended with the oil, which adds a nutty flavor and smooth texture.
  3. Add the chopped onion to the quark mixture. Stir gently to incorporate the onion evenly throughout. The onion should be well-distributed, providing a subtle crunch and sharpness to the creamy quark.
  4. Season the mixture with fine sea salt and freshly ground black pepper to taste. If desired, add a splash of lemon juice for a hint of acidity. Mix well and taste the mixture on a piece of bread to ensure the seasoning is balanced. Adjust the salt and pepper as needed.
  5. Snip fresh chives into small pieces and fold them into the quark mixture. The chives add a fresh, mild onion flavor and a pop of color. Ensure they are evenly distributed throughout the mixture.
  6. Allow the quark mixture to rest for about 10 minutes. This resting period allows the flavors to meld and the sharpness of the onion to mellow, resulting in a more harmonious taste.
  7. Serve the Quark mit Leinöl cool, accompanied by soft pretzels, fresh bread, or boiled potatoes. The dish should have a creamy texture with a hint of nuttiness from the linseed oil and a gentle onion flavor, making it a delightful complement to the warm, starchy sides.
