Serves 4 to 6 Dip vegan, Appetizers

Senafich Mustard Dip

Senafich Mustard Dip is a staple of Addis Ababa's everyday culinary landscape, a dish that effortlessly brings the household together. In the bustling city, this dip is a constant presence, its scent inviting family and friends to gather around the table. It captures the essence of Ethiopian home-cooked meals, where simplicity and boldness coexist in perfect harmony.

The dip is a delightful balance of pungency and sweetness, with ground mustard seed providing a sharp, assertive kick that is tempered by a touch of honey. The texture is smooth, yet robust, offering a dynamic contrast that enlivens any meal it accompanies. This is not just a condiment, but a flavorful punctuation mark in Ethiopian dining.

Ingredients

  • 3 tbspground mustard seed
  • 2 tbspwater or vinegar
  • 1 tsphoney
  • 1/4 tspfine salt

Method

  1. In a small mixing bowl, combine 3 tablespoons of ground mustard seed with 2 tablespoons of water or vinegar. Use a spoon to mix them together until the mustard seed is fully moistened, ensuring there are no dry spots. The choice between water and vinegar will affect the dip's tanginess, with vinegar providing a sharper flavor.
  2. Add 1 teaspoon of honey to the mustard mixture. Stir gently to incorporate the honey thoroughly, which will balance the sharpness of the mustard with a hint of sweetness. This step is crucial for achieving the characteristic flavor profile of the dip.
  3. Sprinkle 1/4 teaspoon of fine salt into the mixture. Stir well to ensure the salt dissolves completely, enhancing the overall taste of the dip. Taste the mixture and adjust the salt if necessary, keeping in mind that the mustard should have a bold, yet balanced flavor.
  4. Continue stirring the mixture until it reaches a smooth, paste-like consistency. The dip should be thick enough to hold its shape but smooth enough to spread easily. If it feels too thick, add a few more drops of water or vinegar, stirring until the desired consistency is achieved.
  5. Transfer the Senafich Mustard Dip to a small serving bowl. Its vibrant yellow color and pungent aroma should be inviting and ready to accompany traditional Ethiopian dishes like injera, kitfo, or tibs. Serve immediately to enjoy its fresh and robust flavors.
