It's a dish that doesn't require a written recipe, as its preparation is second nature to Mallorcan cooks. This version stays true to its roots, with straightforward seasoning and hearty portions that reflect the generous spirit of Spanish family meals.

The dish combines the rich, spiced flavor of sobrasada de Mallorca with the floral sweetness of orange blossom honey, all spread over a rustic loaf or coca bread. A touch of sweet pimentón adds a subtle warmth, creating a savory-sweet balance that captures the essence of Mallorcan everyday cooking.

Ingredients

  • 250 gsobrasada de Mallorca — at room temperature
  • 2 tbsporange blossom honey
  • 1rustic loaf or coca bread — sliced and toasted
  • 1 tspsweet pimentón — to finish

Method

  1. Begin by placing 250 g of sobrasada de Mallorca into a mixing bowl. Use a fork or a wooden spoon to break it down into a smooth, spreadable paste. This ensures that the sobrasada will blend well with the other ingredients and create a uniform texture.
  2. Add 2 tbsp of orange blossom honey to the sobrasada. Stir the mixture thoroughly until the honey is fully incorporated, creating a glossy and slightly sticky consistency. The honey will balance the savory flavors of the sobrasada with a hint of sweetness.
  3. Sprinkle 1 tsp of sweet pimentón over the mixture. Fold it in gently but thoroughly, ensuring that the pimentón is evenly distributed throughout the sobrasada. This will add a subtle smoky aroma and a vibrant color to the spread.
  4. Transfer the mixture to a small serving bowl. Let it rest for about half an hour at room temperature. This resting period allows the flavors to meld together, and the pimentón to infuse fully into the sobrasada, enhancing its depth of flavor.
  5. While the sobrasada rests, prepare the bread. Slice a rustic loaf or coca bread into thick slices. Toast them lightly on a grill or in a toaster until they are golden and crisp on the outside but still soft inside.
  6. Taste the sobrasada mixture on a piece of the toasted bread. This will help you judge the balance of flavors as it will be eaten. Adjust with a pinch of salt if necessary, but remember that the sobrasada itself is already seasoned.
