Çipura Izgara

Ingredients

  • 2whole sea bream

Method

  1. Rinse the 2 whole sea bream under cold running water to remove any scales or impurities. Pat them dry thoroughly with paper towels, both inside and out, to ensure a good sear when cooking. Make three diagonal slashes on each side of the fish to help the flavors penetrate and to ensure even cooking.
  2. In a small bowl, mix 2 tablespoons of olive oil with 1 teaspoon of oregano. Add fine sea salt and black pepper to taste, adjusting according to your preference. Rub this mixture generously over the entire surface of the fish, making sure to get into the slashes and inside the cavity for maximum flavor.
  3. Preheat a large grill pan over medium-high heat until it is hot enough that a drop of water sizzles and evaporates upon contact. Lightly oil the pan with a bit of olive oil to prevent sticking.
  4. Place the seasoned sea bream onto the hot grill pan. Cook for about 4-5 minutes on one side, pressing down gently with a spatula to ensure even contact with the pan. The fish is ready to flip when the skin is crisp and golden brown, and the flesh near the slashes starts to turn opaque.
  5. Carefully flip the fish using a wide spatula, and cook the other side for another 4-5 minutes. The fish is done when the flesh is opaque all the way through and flakes easily with a fork. The aroma should be fresh and slightly herbal from the oregano.
  6. Transfer the cooked sea bream to a serving platter. Squeeze fresh lemon juice over the top to add brightness and balance the flavors. Taste a small piece of the fish and adjust the seasoning with more salt if needed.
  7. Serve the Çipura Izgara immediately, allowing everyone to enjoy the dish while it's hot and the flavors are at their peak. This dish is perfect for sharing, bringing a taste of the Aegean coast to your table.
