The taste of Aalsuppe is a harmonious balance between the delicate freshness of eel and the subtle sweetness of a dried fruit mix. Each spoonful reveals tender morsels of carrot and leek, all enveloped in the rich embrace of beef broth. A hint of bay leaf and a sprinkle of parsley bring freshness to the savory depth, while fine sea salt and black pepper add the necessary seasoning, creating a dish that is both complex and deeply satisfying.

Ingredients

  • 400 gfresh eel — cut into pieces
  • 200 gdried fruit mix — soaked
  • 2carrots
  • 1leek
  • 1.5 Lbeef broth
  • 2 tbspfresh parsley
  • 1bay leaf

Method

  1. Begin by cleaning the 400 g of fresh eel. Rinse the eel under cold running water to remove any slime or debris. Pat it dry with paper towels to ensure it sears or poaches cleanly later. Cut the eel into bite-sized pieces and set aside.
  2. In a large pot, melt 2 tablespoons of butter over medium heat. Add 1 finely chopped onion and cook until it becomes translucent and fragrant, about 3 to 4 minutes. This will form the aromatic base for your soup.
  3. Add 1.5 liters of beef broth to the pot along with the eel pieces. Bring the mixture to a gentle simmer. Add 1 bay leaf to infuse the broth with a subtle herbal note.
  4. Peel and slice 2 carrots and clean and slice 1 leek. Add them to the simmering broth. The vegetables should become tender, and the broth should take on a slightly sweet aroma from the carrots.
  5. Introduce 200 g of dried fruit mix to the pot. Stir well and allow the fruits to soften and impart their sweetness to the broth. This will balance the savory flavors of the soup.
  6. As the eel cooks, it should turn opaque and firm to the touch, indicating that it is cooked through. This should take about 10 minutes, depending on the thickness of the eel pieces.
  7. Once the eel is cooked, taste the soup and add fine sea salt and black pepper to taste. Remember, the salt should enhance the flavors without overpowering them.
  8. Finish by stirring in 2 tablespoons of freshly chopped parsley for a burst of color and freshness. Serve the Aalsuppe immediately, accompanied by boiled potatoes if desired.
