Arroz de Carreteiro de Linguiça

Arroz de Carreteiro de Linguiça brings the essence of gaúcho campfire cooking into the home kitchen. This dish hails from the southern reaches of Brazil, where it was a staple for cattle drivers who needed hearty, filling meals on the road. Today, it is a beloved comfort food, especially enjoyed in the colder months when its warmth and richness are most appreciated. This version captures the simplicity and satisfaction that comes from generations of practical, flavorful cooking.

Expect a robust and satisfying mix of savory calabresa sausage, tender grains of rice, and the fragrant notes of sautéed onion and bell pepper. The sprinkle of fresh parsley brightens each bite, cutting through the richness with a hint of freshness. Salt is measured by intuition, a nod to its rustic origins, allowing each cook to make the dish their own. Arroz de Carreteiro de Linguiça is best served directly from the pot, inviting everyone to gather around and share in its comforting embrace.

Ingredients

  • 300 glinguiça calabresa
  • 300 grice
  • 1onion
  • 1bell pepper
  • 1 handfulparsley
  • 2 tbspoil
  • to tastefine sea salt

Method

  1. Begin by slicing the 300 g of linguiça calabresa into thin rounds, about 1/4 inch thick. Place the slices in a bowl and season them with a pinch of fine sea salt. Toss the slices to ensure they are evenly coated with the salt, enhancing their flavor as they cook.
  2. Heat 2 tablespoons of oil in a large, heavy-bottomed pan over medium-high heat. Once the oil is shimmering, add the seasoned linguiça slices in a single layer. Allow them to brown, turning occasionally, until each piece is deeply colored and has rendered some of its fat, which should take on a rich, golden hue.
  3. While the linguiça is browning, finely chop 1 onion and 1 bell pepper. Once the linguiça is browned, remove it from the pan and set aside, leaving the rendered fat in the pan. Add the chopped onion and bell pepper to the pan, stirring to coat them in the flavorful fat. Cook until the onion becomes translucent and the bell pepper softens, releasing a sweet aroma.
  4. Add 300 g of rice to the pan with the softened vegetables. Stir the rice to coat each grain with the oil and vegetable mixture, allowing it to absorb the flavors. Continue stirring until the rice turns slightly opaque, indicating it has absorbed enough of the fat and flavors.
  5. Return the browned linguiça to the pan, mixing it with the rice and vegetables. Pour in enough water to cover the rice by about 1 inch. Increase the heat to bring the mixture to a gentle boil, then reduce to a simmer. Cover the pan with a lid, allowing the rice to cook and absorb the liquid, stirring occasionally to prevent sticking.
  6. Once the rice is tender and has absorbed most of the liquid, check the seasoning. Add more fine sea salt if necessary, tasting to ensure the flavors are balanced. The rice should be fluffy, and the linguiça should be tender and juicy.
  7. Finely chop a handful of parsley and sprinkle it over the finished dish, adding a fresh, herbal note. Serve the Arroz de Carreteiro de Linguiça hot, inviting everyone to gather around and share this comforting, flavorful meal.
