Ingredients

Method

  1. Preheat your oven to 200°C (390°F). Start by patting the 600 g white fish dry with paper towels to remove excess moisture. This helps the seasoning adhere better and ensures even cooking. Season the fish lightly with fine sea salt on both sides and set aside.
  2. Trim the tops and bases of the 2 fennel bulbs, then slice them thinly. This will allow them to cook evenly and become tender in the oven. Arrange the sliced fennel in a single layer on the bottom of a large baking dish, creating a bed for the fish.
  3. Drizzle 60 ml of extra virgin olive oil over the fennel slices, ensuring they are well coated. This will help them caramelize and enhance their natural sweetness. Season the fennel with a pinch of fine sea salt and black pepper to taste.
  4. Place the seasoned fish on top of the fennel bed in the baking dish. Pour 100 ml of white wine around the fish, which will steam and infuse the dish with flavor as it bakes.
  5. Slice 2 lemons into thin rounds and arrange them over the fish. The lemons will impart a bright, citrusy aroma and flavor to the dish as they cook.
  6. Transfer the baking dish to the preheated oven. Bake until the fish is just opaque and flakes easily with a fork, which indicates it is perfectly cooked. The fennel should be tender, and the lemon slices slightly caramelized.
