Beef Pulao

Serves 4 to 6 meat

Beef Pulao

Beef Pulao, as prepared in bustling Karachi homes, is a dish that brings comfort and warmth to the dining table. It's a staple for family meals, each serving a reflection of the hands that prepare it — with salt pinched intuitively and a generous hand for ghee, ensuring every grain of basmati rice and piece of tender beef is infused with rich flavor. This is the home version, capturing the essence of a cook's instinct and care.

The final dish, aromatic with the depth of beef yakhni and the sweetness of caramelized onions, offers a satisfying balance of flavors. Each spoonful is a medley of tender beef and perfectly cooked rice, with ghee lending a silky texture. Serve it with a side of fresh salad or cooling raita, and let the simplicity of this pulao speak for itself.

Ingredients

  • 700 gbeef
  • 400 gbasmati rice
  • 1 Lbeef yakhni
  • 2onions — fried
  • 3 tbspghee
  • to tastefine sea salt

Method

  1. Begin by cutting the 700 g beef into bite-sized pieces. Season the beef generously with fine sea salt, ensuring each piece is evenly coated. This step helps to enhance the flavor of the meat as it cooks.
  2. In a large, heavy-bottomed pot, heat 3 tablespoons of ghee over medium-high heat. Once the ghee is hot and shimmering, add the seasoned beef pieces in a single layer. Brown the beef on all sides until each piece develops a deep, rich color, which should take about 5-7 minutes per side. This browning process adds depth to the flavor of the pulao.
  3. Thinly slice the 2 onions and add them to the pot with the browned beef. Stir the onions and beef together, allowing the onions to soften and become translucent, which should take about 5 minutes. The onions will add sweetness and complexity to the dish as they caramelize slightly.
  4. Pour 1 liter of beef yakhni into the pot, ensuring the beef is fully submerged. Bring the mixture to a gentle simmer over medium heat. Cover the pot with a lid and allow the beef to braise until it is tender, which you can check by piercing a piece with a fork; it should slide in easily.
  5. While the beef is braising, rinse 400 g of basmati rice under cold water until the water runs clear. This step removes excess starch and prevents the rice from becoming sticky.
  6. Once the beef is tender, add the rinsed basmati rice to the pot. Stir gently to combine the rice with the beef and yakhni. Increase the heat to bring the mixture to a boil, then reduce to a low simmer and cover the pot tightly with a lid.
  7. Cook the pulao until the rice is fully cooked and has absorbed all the liquid, which you can tell by the rice being tender and fluffy. Taste the pulao and adjust the salt as needed, keeping in mind that the flavors should be well balanced.
  8. Once the rice is cooked, remove the pot from heat and let it sit, covered, for about 10 minutes. This resting period allows the flavors to meld and the rice to firm up slightly. Serve the Beef Pulao hot, accompanied by bread or salad, and enjoy the communal spirit of this Karachi-style dish.
