Cazuela de Pollo emerges from Argentina's heartland as a comforting winter dish, a warm embrace against the cold of the interior. Traditionally, it's a meal shared during the chillier months, when families gather to enjoy the hearty flavors that come together in this rustic stew.

The taste is a soothing blend of tender chicken and the earthiness of potatoes and squash, all cocooned in a cumin-kissed yellow broth. Ingredients

  • 1 kg (2.2 lb)chicken pieces
  • 2potatoes, cubed
  • 2ears corn, rounds
  • 300 g (10 oz)squash, cubed
  • 1onion, chopped
  • 1 tspcumin

Method

  1. In a large, heavy-bottomed pot, heat a tablespoon of oil over medium-high heat. Add 1 kg of chicken pieces and 1 chopped onion. Brown the chicken on all sides, stirring occasionally to ensure the onion becomes translucent and fragrant. This step develops a rich base flavor for the stew.
  2. Once the chicken is browned and the onion is soft, sprinkle in 1 teaspoon of cumin. Stir to coat the chicken and onion with the cumin, letting it toast slightly to release its aroma. Pour in enough water to cover the chicken pieces completely, scraping the bottom of the pot to release any browned bits.
  3. Bring the mixture to a gentle simmer. Reduce the heat to low and cover the pot. Allow it to simmer for about 25 minutes. During this time, the chicken will cook through and infuse the broth with its flavor.
  4. After 25 minutes, add the cubed potatoes, rounds of corn, and cubed squash to the pot. Stir gently to combine, ensuring the vegetables are submerged in the broth. Increase the heat slightly to bring the mixture back to a simmer.
  5. Continue cooking until the potatoes and squash are tender when pierced with a fork, and the corn is cooked through. The squash will begin to break down, naturally thickening the broth and giving it a slightly creamy texture.
  6. Taste the broth and adjust the seasoning with salt to your liking. The broth should be flavorful and slightly thickened from the squash. Serve the cazuela de pollo in bowls, ensuring each serving has a good mix of chicken, vegetables, and broth.
