Chinese Chicken Sauté

Chinese Chicken Sauté is a dish firmly rooted in the everyday rhythms of Chinese home cooking, where practicality and flavor converge seamlessly. This dish is a staple at the family dinner table, bringing together the comforting flavors of tender chicken thighs, onions, and peppers.

Ingredients

  • 700 gchicken thighs
  • 1onion
  • 2peppers
  • 2 tbspoil
  • to tastefine sea salt and black pepper

Method

  1. Cut the 700 g chicken thighs into bite-sized pieces and pat them dry with paper towels. Season the chicken generously with fine sea salt and black pepper. Heat 2 tbsp of oil in a large wok or deep skillet over medium-high heat. Once the oil is shimmering, add the chicken pieces in a single layer, being careful not to overcrowd the pan. Cook until the chicken is browned on all sides, turning occasionally, about 5-7 minutes. The chicken should have a golden crust and be slightly firm to the touch.
  2. While the chicken is browning, peel and thinly slice 1 onion. Core and slice 2 peppers into strips. Once the chicken is browned, push it to the sides of the pan to make space in the center. Add the sliced onion and peppers to the pan. Stir-fry the aromatics in the center of the pan until they are tender and the onion is translucent, about 3-4 minutes. The vegetables should be soft but still retain a bit of crunch.
  3. Mix the chicken back into the center with the vegetables. If there is excess liquid in the pan, increase the heat slightly to allow the sauce to reduce. Stir occasionally, ensuring the chicken and vegetables are well-coated with the sauce. Taste and adjust seasoning with more salt if needed. The sauce should cling lightly to the ingredients without being too watery.
  4. Once the sauce has reached the desired consistency, remove the pan from heat. If you have fresh herbs like cilantro or green onions, you can chop a handful and sprinkle them over the dish for added freshness and aroma. Serve the Chinese Chicken Sauté immediately, family-style, allowing everyone to help themselves at the table.
