Ingredients

Method

  1. Start by preparing your ingredients. Dice 1 onion finely and set aside. Chop 2 tomatoes into small cubes. Drain and rinse 400 g chickpeas thoroughly to remove any excess liquid and set them aside. This preparation ensures even cooking and a well-blended curry.
  2. In a large wok or deep pan, heat 2 tbsp oil over medium heat. Once the oil is shimmering, add the diced onion. Stir occasionally and cook until the onion becomes translucent and soft, releasing its sweet aroma, which should take about 5 minutes. This slow cooking of the onion forms the flavorful base of your curry.
  3. Add 1 tsp cumin to the softened onions in the pan. Stir continuously for about 1 minute until the cumin releases its fragrant aroma, indicating that it is toasted and ready. This step infuses the oil and onions with a warm, earthy flavor.
  4. Add the chopped tomatoes to the pan. Stir well to combine with the onion and cumin. Cook until the tomatoes break down and form a thick, chunky sauce, which should take about 5-7 minutes. The tomatoes should lose their raw edge and blend smoothly with the onions.
  5. Add the drained chickpeas to the pan. Stir them into the tomato-onion mixture, ensuring they are well-coated with the sauce. Cook for another 10 minutes, stirring occasionally, until the chickpeas are heated through and the curry has thickened to your liking. The chickpeas should be tender and the sauce should cling to them.
  6. Taste the curry and season with fine sea salt and black pepper to your preference. Stir well to distribute the seasoning evenly. Adjust the seasoning gradually, tasting as you go, to achieve a balanced flavor that suits your palate.
