Com Ga

Serves 4 to 6 chicken

Com Ga

Com Ga, a beloved dish from Hoi An, finds its roots in the home kitchens where salt is measured by intuition and chicken fat is embraced with generosity. This version captures the essence of a Vietnamese family gathering, where the table is an invitation to share and savor. As the centerpiece of many meals, it brings together the comforting warmth of turmeric rice and the aromatic allure of herbs.

Each bite of Com Ga should resonate with the savory richness of tender chicken, balanced by the tang of onion pickle and the gentle heat of nuoc mam gung. This dish is a celebration of flavors, each element complementing the other, creating a harmonious blend that is both vibrant and satisfying. It is meant to be enjoyed communally, an embrace of culinary tradition shared around the table.

Ingredients

  • 1whole chicken
  • 400 gturmeric rice
  • 1onion pickle
  • 1 handfulherbs
  • nuoc mam gung — to serve
  • to tastefine sea salt

Method

  1. Pat the chicken dry with paper towels to remove excess moisture, ensuring a better sear. Season the chicken generously with fine sea salt, covering all sides evenly. Heat a large pot over medium-high heat and add enough oil to coat the bottom. Once the oil shimmers, place the chicken in the pot, breast side down, and brown it for about 5-7 minutes until the skin is golden and crisp. Flip the chicken to brown the other side, ensuring an even color all around.
  2. Once the chicken is browned, add sliced onions and any other desired aromatics to the pot. Stir them around the chicken, allowing them to soften and release their fragrance, which should take about 3-4 minutes. The onions should become translucent and slightly caramelized, enhancing the flavor of the chicken.
  3. Pour enough water into the pot to cover the chicken halfway. Bring it to a gentle simmer, reducing the heat to low. Cover the pot with a lid and let the chicken cook slowly for about 45 minutes to an hour, or until the meat is tender and easily pulls away from the bone. The broth should be rich and aromatic, with a golden hue from the chicken and spices.
  4. Carefully remove the chicken from the pot and set it aside to rest. Increase the heat to medium-high and let the sauce reduce slightly if it appears too thin. Taste the broth and adjust the seasoning with more fine sea salt if needed, ensuring a balanced and flavorful base for the rice.
  5. While the chicken rests, prepare the turmeric rice according to package instructions or your preferred method. The rice should be fluffy and infused with the vibrant color and subtle flavor of turmeric, complementing the chicken perfectly.
  6. Carve the rested chicken into serving pieces, ensuring each piece retains some of the crispy skin. Arrange the chicken over a bed of turmeric rice on a large platter.
  7. Finish the dish by scattering a handful of fresh herbs over the chicken and rice, adding a burst of color and freshness. Serve with nuoc mam gung on the side for dipping, allowing each guest to adjust the flavor to their liking.
