Dal Makhani hails from the lush fields of Punjab, where it's a staple at dinner tables, especially during festive nights. This comforting dish is rooted in the traditions of Punjabi home cooking, where ingredients are thoughtfully measured by intuition rather than precision. It's a dish meant to be shared, with its rich flavors reflecting the warmth of the gatherings it accompanies.

Ingredients

  • 300 gwhole black lentils
  • 100 gkidney beans
  • 100 mlcream
  • 50 gbutter
  • 2tomatoes
  • 1 tbspginger-garlic paste
  • to tastefine sea salt

Method

  1. Begin by soaking 300 g whole black lentils and 100 g kidney beans in water overnight. This softens them and reduces cooking time. Drain and rinse the next day before cooking.
  2. In a large pot, combine the soaked lentils and kidney beans with enough water to cover them by about an inch. Bring to a boil over high heat, then reduce to a simmer. Cook until the lentils and beans are tender, with the lentils appearing slightly mushy and the beans easily mashed with a fork.
  3. While the lentils and beans are cooking, finely chop 2 tomatoes. In a separate pan, melt 50 g of butter over medium heat. Add 1 tbsp of ginger-garlic paste and sauté until fragrant, about 1-2 minutes, then add the chopped tomatoes. Cook until the tomatoes break down into a thick sauce and the oil begins to separate from the mixture.
  4. Once the lentils and beans are cooked, add them to the tomato mixture. Stir well to combine, ensuring the lentils and beans are evenly coated with the tomato sauce. Allow the mixture to simmer gently, stirring occasionally, until it thickens and the flavors meld together.
  5. Pour in 100 ml of cream, stirring continuously to incorporate it fully into the dal. The cream will give the dal a rich, velvety texture. Continue to simmer until the dal reaches a creamy consistency, with the lentils and beans fully integrated into the sauce.
  6. Taste the dal and adjust the seasoning with fine sea salt to your preference. The flavors should be balanced, with a hint of sweetness from the cream and a savory depth from the ginger-garlic and tomatoes.
  7. Serve the Dal Makhani hot, garnished with a swirl of cream if desired. This dish is best enjoyed with rice or Indian bread, perfect for soaking up the rich, creamy sauce.
