Dam Pukht

Serves 4 to 6 meat

Dam Pukht

Dam Pukht hails from the bustling streets and serene homes of Peshawar, a city known for its rich culinary traditions and hospitality. This version captures the essence of a family gathering, where the dish is a centerpiece, crafted with intuition and a generous hand. It's a dish that speaks of warmth and sharing, often appearing at tables set for friends and family, without the need for special occasions.

The flavors of Dam Pukht are robust and comforting, with mutton tenderized by a slow embrace of yogurt and spices. The ghee adds a luxurious depth, while black pepper and mace lend it a subtle warmth. Each bite is a reminder of home-cooked comfort, served with the simplicity and elegance expected in a Peshawari kitchen.

Ingredients

  • 1 kgmutton
  • 200 gyogurt
  • 1 tbspblack pepper
  • 4 tbspghee
  • 1 tspmace
  • to tastefine sea salt

Method

  1. Begin by seasoning 1 kg of mutton with 1 tbsp of black pepper, 1 tsp of mace, and fine sea salt to taste. Use your hands to massage the spices into the meat, ensuring each piece is evenly coated. This step is crucial as it allows the flavors to penetrate the meat, enhancing the overall taste of the dish.
  2. In a large, heavy-bottomed pot, heat 4 tbsp of ghee over medium-high heat. Once the ghee is hot and shimmering, add the seasoned mutton pieces in batches. Brown each piece thoroughly on all sides, ensuring a deep, rich color. This browning process develops a complex flavor base for the dish.
  3. Once all the mutton pieces are browned, return them to the pot. Lower the heat to medium and add 200 g of yogurt. Stir well to coat the meat evenly. The yogurt will tenderize the meat and add a subtle tanginess to the dish.
  4. Cover the pot with a tight-fitting lid to trap the steam, which is essential for the 'dum' or slow-cooking process. Reduce the heat to low and allow the mutton to braise gently. Cook until the meat is tender and easily pulls apart with a fork. This can take some time, but the slow cooking ensures the meat absorbs all the flavors.
  5. Once the mutton is tender, taste the dish and adjust the salt if necessary. The flavors should be well-balanced, with the warmth of the spices complementing the richness of the ghee and yogurt. Serve the Dam Pukht hot, alongside rice, bread, or a fresh salad, inviting everyone to share in this hearty meal.
