Fischstäbchen hausgemacht

Fischstäbchen hausgemacht, or homemade fish sticks, are a beloved staple in German households. Unlike their store-bought counterparts, these are crafted with care from fresh cod fillets and fried to perfection. A true family favorite, they find their way onto the dinner table on busy weeknights and casual weekend lunches alike, offering a comforting taste of home with every bite.

The crisp, golden-brown coating gives way to tender, flaky fish, seasoned just right with a sprinkle of fine sea salt. Each bite is a harmonious blend of texture and flavor, made all the more delightful when paired with a dollop of tangy remoulade. The simplicity of this dish is its charm, inviting second helpings without hesitation.

Ingredients

  • 600 gcod fillets — cut into strips
  • 100 gflour
  • 2eggs
  • 150 gbreadcrumbs
  • for fryingclarified butter
  • Remoulade — to serve
  • to tastefine sea salt

Method

  1. Start by rinsing the 600 g cod fillets under cold water to remove any surface impurities. Pat them dry thoroughly with paper towels to ensure they sear properly and do not steam in the pan.
  2. Set up a breading station with three shallow dishes: place 100 g flour in the first, beat 2 eggs in the second, and spread 150 g breadcrumbs in the third. This will allow you to coat the fish evenly and create a crispy crust.
  3. Cut the cod fillets into evenly sized strips, about 2 cm wide, to ensure they cook uniformly. Lightly season the strips with fine sea salt to enhance their natural flavor.
  4. Dredge each fish strip first in the flour, shaking off any excess, then dip into the beaten eggs, and finally coat thoroughly with breadcrumbs. Press the breadcrumbs gently onto the fish to help them adhere better.
  5. Heat a generous amount of clarified butter in a large frying pan over medium-high heat. You need enough butter to cover the bottom of the pan to ensure even frying.
  6. Once the butter is hot and shimmering, carefully add the breaded fish strips to the pan without overcrowding. Fry them in batches if necessary to maintain the oil temperature.
  7. Cook the fish strips for about 3-4 minutes on each side, until they are golden brown and the fish inside is just opaque and flakes easily with a fork. Adjust the heat if the breadcrumbs brown too quickly.
  8. Remove the cooked fish sticks from the pan and drain them briefly on paper towels to remove any excess butter. Taste a piece and adjust the salt if needed.
  9. Serve the Fischstäbchen immediately with a side of Remoulade and boiled potatoes, if desired. Enjoy the dish while the fish is hot and crispy.
